Ingredients (Yield: 7 buns)

- 150 g pumpkin puree
- 3 g instant yeast
- 250 g low-gluten flour
- 40 g sugar
- 15 g oil
- 3 g salt

Instructions

1. Make the Dough
- In a mixing bowl, combine the flour, instant yeast, sugar, and salt.
- Add the pumpkin puree and oil.
- Mix until a dough forms, then knead for about 8 minutes, until smooth and elastic. The dough should feel soft but not sticky.
- Cover the dough and let it rise in a warm place for 1–1½ hours, or until doubled in size.
2. Shape the Mantou
- Transfer the dough to a lightly floured surface.
- Roll the dough into a thin rectangle.
- Roll it up tightly into a log shape.
- Using a serrated knife, cut the log into 7 equal pieces.
- Roll into a ball and place each piece on a small square of parchment paper.
- Cover and proof in a warm place for about 30 minutes.
Tip: Avoid over-proofing, as it can cause the mantou to wrinkle after steaming.
3. Steam the Mantou
- Bring water in a steamer to a boil.
- Place the mantou in the steamer and steam over medium heat for 15 minutes.
- Turn off the heat and let the mantou rest in the covered steamer for 5–10 minutes before opening the lid.

Texture & Storage Tips
- Pumpkin moisture levels can vary, so adjust the dough with a little extra flour or water if needed.
- Store cooled mantou in an airtight container for up to 2 days, or freeze for up to 1 month.
- Re-steam before serving for the best texture.

Matcha Baozi with Custard Filling


Soft, fluffy matcha baozi with a smooth, creamy pudding filling.  These vibrant green steamed buns combine the earthy aroma of Japanese matcha with a rich, silky custard center that melts in your mouth. Lightly sweet and beautifully balanced, they’re perfect as a snack, dessert, or a special homemade treat with tea or coffee.



Ingredients

For the Filling:

- 200ml milk
- 30g corn starch
- 40g sugar
- 1 egg

For the Dough:

- 240g cake flour
- 10 g matcha powder
- 4g instant dry yeast  
- 10g sugar  
- 10g cooking oil 
- 125g lukewarm water

Instructions

1. Prepare the Custard:
- Mix or blend all the custard ingredients.
- Cook over low heat until thickened. Stir constantly as it's prone to burning.
- Transfer to a bowl, cover with plastic wrap (touching the surface to prevent a skin from forming), and let it cool completely.
2. Prepare the Dough:
- Add all the dough ingredients to the mixer bowl.
- Knead on low speed for 8–10 minutes until smooth.
- Transfer the dough to a greased bowl, cover with a cloth, and let it rest for 1–1.5 hours until doubled in size.
3. Assemble the Buns:
- Divide the pudding into 9 equal portions.
- Once the dough has risen, deflate it gently.
- Roll the dough into a rope and cut it into 9 equal pieces.
- Flatten each piece into a 10 cm disc, keeping the edges thinner and the center thicker.
- Place one portion of pudding in the center of each disc.
- Bring the edges together and seal completely to enclose the filling.
4. Proof the Buns:
- Place the buns on parchment-lined steamer trays or plates, leaving space between them.
- Let them rest for 30 minutes until they become light and puffy.
5. Steam the Buns:
- Boil water in a wok or pot.
- Place the steamer trays or plate over the boiling water.
- Steam over medium-high heat for 10 minutes.
- Serve immediately.
6. Storage and Reheating:
- Store in the refrigerator for up to 3 days or freeze for up to 2 months.
- To reheat: Steam frozen buns for 6 minutes, or thaw first and steam for 3 minutes.

Mantou with Scallions - Easy Steamed Buns

- white pepper, salt (to taste)

Instructions

1. Combine flour, salt, sugar, and instant yeast in a large mixing bowl.
2. Pour in warm water and mix until a dough forms.
3. Knead by hand or with a dough hook for 7–10 minutes until smooth and soft.
4. Cover and let the dough rest for 1 hour until doubled in size.
5. Place dough on a floured surface and roll into a large rectangle.
6. Brush with sesame oil, sprinkle salt and white pepper evenly.
7. Spread chopped scallions over the dough and press them down to stick.
8. Roll the dough tightly into a log and pinch the edges to seal.
9. Cut the log into 7 even pieces.
10. Place buns on a plate lined with parchment, cover with cloth, and rest 30 minutes.
11. Boil water in a steaming pot and place buns on a steaming rack.
12. Cover with lid and steam for 12–15 minutes.
13. Turn off heat, keep lid closed, and let buns rest covered for 10 minutes to prevent collapsing.
14. Serve the mantou warm. Leftovers can be frozen and reheated anytime.

Pampuchy – Soft Polish Steamed Buns


Pampuchy are traditional Polish steamed buns that are irresistibly soft, pillowy, and slightly sweet. Made with a simple yeast dough, these buns are steamed rather than baked, giving them a light, fluffy texture that melts in your mouth.

They’re incredibly versatile: serve them sweet with jam, honey, or fruit sauce, or savory with goulash, mushroom sauce, or a hearty filling. Pampuchy are perfect for family meals, weekend breakfasts, or festive occasions, and they store and reheat beautifully, making them convenient for busy days.

With just a few basic ingredients, these buns showcase the charm of Polish home baking—simple, comforting, and utterly delicious.


Ingredients

- 5g yeast
- 280 g all-purpose flour
- 120 ml warm milk
- 1 egg
- 10 ml oil
- Salt, a pinch
- 15g sugar

Instructions

1. Make the dough
- In a large mixing bowl (or stand mixer bowl), combine all ingredients:
flour, yeast, milk, egg, oil, sugar, and salt.
- Mix until everything comes together, then knead for at least 5 minutes (or 8–10 minutes in a mixer) until the dough is smooth, elastic, and soft but not sticky.
2. Let the dough rise
- Transfer the dough to a greased bowl.
- Cover the bowl with a clean towel or plastic wrap.
- Leave it in a warm, draft-free place for about 1 hour, or until the dough doubles in size.
3. Shape the buns
- Transfer the risen dough to a lightly floured surface.
- Divide into 7 equal pieces (≈68–70 g each).
- Shape each piece into a smooth round ball by rolling it between your hands.
- Cover with a clean towel and let rest for 15 minutes to puff up slightly.
(If you can’t steam all at once, keep the remaining dough balls in the fridge to prevent over-proofing.)
4. Steam the pampuchy
- Bring water to a gentle boil in your steamer (water should reach about ⅓ up the pot).
- Place the pampuchy on the steamer insert, leaving enough space between them (they will expand).
- Cover tightly and steam for 15 minutes over medium heat — steady but not vigorous boiling.
- Do not open the lid while steaming.
- When done, remove the buns carefully. Repeat with the remaining dough if needed.
5. Serving Ideas
- Sweet: serve warm with jam, fruit sauce, sweetened sour cream, or honey & butter.
- Savoury: serve with goulash, mushroom sauce, or fill with savoury stuffing before steaming.
6. Storage
- Store in an airtight container in the fridge for up to 5 days.
- Reheat in the microwave for 40–60 seconds until soft and warm.
- Freeze for up to 2 months; defrost and re-steam or microwave until fluffy again.

Sesame Mantou (Black Sesame Steamed Buns)


Sesame mantou are soft, fluffy Chinese steamed buns enriched with the deep, nutty flavor of roasted black sesame. These buns are made from a simple yeast dough with ground black sesame seeds, sugar, and a bit of oil - then shaped into spirals or rolls and steamed until tender.
Unlike filled baozi, mantou are usually unfilled or have swirled-in flavor like sesame or taro. They’re slightly sweet, aromatic, and incredibly comforting.
Perfect for breakfast, afternoon tea, or as a snack, sesame mantou are best enjoyed warm - either fresh from the steamer or lightly reheated. They're also freezer-friendly, so you can make a batch and enjoy them anytime.


Ingredients (8 buns)

- 320g cake flour
- 50g sesame powder 
- 40g sugar
- 6g instant dry yeast
- 180g water

Instructions

1. Prepare the Dough:
   - In a bowl, combine all the ingredients using a spoon or spatula.
   - Knead the dough for 10-12 minutes until smooth, making sure to remove as many air bubbles as possible.
   - Cover with a tea towel and let it rest for 1 to 1.5 hours.
2. Shape the Buns:
   - After the dough has rested, deflate it.
   - Knead it briefly.
   - Divide the log into 8-9 equal portions.
   - Shape the buns and place them on a piece of parchment paper.
   - Let the buns rest for 30 minutes.
3. Steaming:
   - Prepare a pot of water for steaming and bring it to a rolling boil.
   - Place the buns in the steamer and steam over high heat for 12 minutes.
   - Remove from the steamer and serve warm.

Racuchy with Strawberries (Polish Yeast Pancakes)


Racuchy are soft, pillowy Polish pancakes typically made with a yeast-based dough, giving them a light and airy texture. They’re gently pan-fried until golden brown and often studded with juicy strawberries inside or served with fresh fruit on top. Slightly sweet and beautifully crisp on the outside, they make a delightful breakfast or afternoon treat - perfect dusted with powdered sugar or served with a dollop of sour cream.
My version is simplified and uses baking powder, saving you an hour of waiting time. 


Ingredients:

- 250g all-purpose flour
- 5g baking powder
- 180ml milk
- 40g sugar
- 1-2 eggs
- 200g strawberries, sliced

Instructions:

1. Prepare the Batter:
   - In a large mixing bowl, sift together the flour and baking powder to ensure there are no lumps.
   - Add the sugar to the flour mixture and stir to combine.
   - Add the milk and eggs, and mix until well combined.
2. Prepare Strawberries:
   - Wash the strawberries, remove the leaves, and dice them.
   - Gently fold the diced strawberries into the pancake batter until evenly distributed.
3. Cook the Pancakes:
   - Heat a non-stick frying pan or griddle over medium heat, and lightly grease the pan with butter or cooking spray.
   - Once the pan is hot, add 1-2 spoonfuls of pancake batter onto the pan, and use the back of the spoon to spread it into a round shape.
   - Cook the pancake for 2-3 minutes, or until bubbles start to form on the surface and the edges begin to set.
   - Carefully flip the pancake using a spatula and cook for an additional 1-2 minutes, or until golden brown and cooked through.
   - Repeat with the remaining batter, greasing the pan as needed between batches.
4. Serve:
   - Serve the strawberry pancakes warm.
   - Optional: Top with additional sliced strawberries, a drizzle of maple syrup, honey, or whipped cream before serving.

Dziady Kujawskie - Simple Potato Pancakes


Dziady Kujawskie potato pancakes are a traditional dish from the Kuyavia (Kujawy) region of Poland. Unlike classic Polish potato pancakes (placki ziemniaczane), which are made from grated raw potatoes and fried until crispy, Dziady Kujawskie are prepared using boiled potatoes, giving them a softer, slightly chewy texture instead of crunchy edges.  
These pancakes can also be made using leftover prażucha, a dish made by mashing hot cooked potatoes with flour and reserved cooking water.  

The Kuyavian cuisine has long relied on potatoes, known locally as pyry or kartofle, as a staple ingredient. By the 19th century, they had become a dominant part of the regional diet, serving as a foundation for daily meals—whether as a side dish to soup or the main course itself.  
The tradition of Dziady Kujawskie remains strong, particularly in the Radziejów County area. The dish has been recognized in regional culinary competitions, such as the "From Sourdough to Kuyavian Żurek" contest, where it has been featured multiple times between 2011 and 2016.  

These crispy, golden potato pancakes are soft on the inside and packed with rich, savory flavor. The addition of caramelized onion makes them irresistible! Perfect as a snack, side dish, or light meal.  


Ingredients:

- 500 g starchy potatoes
- 120 g all-purpose flour (adjust as needed)  
- 100 ml potato cooking water (reserved from boiling)  
- Salt and black pepper to taste  
- 1 large onion 
- Neutral oil for frying 

Instructions:

1. Cook the Potatoes: 
- Peel and chop the potatoes into chunks.  
- Boil them in salted water until fork-tender.  
- Drain, reserving 100 ml of the cooking water.  
2. Caramelize the Onion: 
- Dice the onion into small pieces.  
- Heat 1-2 tbsp of oil in a pan over low heat.  
- Cook the onions slowly, stirring occasionally, until golden brown and caramelized (about 10 minutes).  
3. Prepare the Dough:
- Mash the hot potatoes thoroughly until smooth, adding the reserved cooking water and flour.  
- I used a blender to achieve a smooth texture. 
- Add salt, pepper, and the caramelized onions.  
- Stir gently. The dough will be sticky - this is normal. 
4. Shape & Fry the Pancakes:  
- Wet your hands with cold water to prevent sticking while shaping the pancakes.  
- Scoop a portion of the dough and flatten it with your hands.  
- Heat a generous amount of oil in a pan over medium heat.  
- Fry each pancake for 2-3 minutes per side until crispy and golden brown.  
- It’s recommended to fry them immediately after shaping, as the dough tends to stick to surfaces.  
5. Serve & Enjoy:
- Stack the pancakes on a plate and top with caramelized onions and sour cream.   
- Serve immediately while warm and crispy!

Korean Radish Pancakes (Mujeon) – 무전


These crispy and savory Korean radish pancakes highlight the mellow sweetness of Korean radish (mu), making them a simple yet incredibly flavorful dish. They have a lightly chewy interior with a golden, crispy crust. Serve them with a tangy soy-lemon dipping sauce for the perfect balance of flavors. If you can’t find Korean radish, daikon is a great substitute!  


Ingredients:

- 400 g daikon radish
- 1 small onion, finely sliced  
- 1 tsp salt
- 120 g all-purpose flour 
- 10 g cornstarch  
- 1 egg 
- 60 ml water (adjust as needed)  
- Dash of white pepper  
- 1-2 tbsp sesame seeds
- Neutral oil (for frying)  

Instructions

1. Prepare the Vegetables:
- Peel the onion, cut in half and slice it thinly.  
- Peel the radish and slice it into 3mm disks, then cut into thin matchsticks of the same thickness.  
- Place the vegetables in a bowl, sprinkle with salt, and let sit for 10 minutes to draw out moisture.  
2. Make the Batter:
- Add flour, cornstarch, egg, and water to the vegetables.  
- Stir until well combined. 
- If the batter is too dry, gradually add water until you reach a thick but spreadable consistency. 
3. Fry the Pancakes: 
- Heat 1-2 tbsp oil in a pan over medium heat.  
- Scoop 1-2 tbsp of the batter into the pan and spread it into a thin pancake.
- Sprinkle sesame seeds on top.  
- Cook for 2-3 minutes until golden brown, then flip and cook for another 2-3 minutes until crispy.  
- Repeat with the remaining batter, adding more oil as needed.  
4. Serve & Enjoy:  
- Serve the pancakes warm with dipping sauceon the side.

Red bean baozi, or steamed buns with red bean filling, are a classic Asian treat, loved for their soft, fluffy dough and sweet, creamy filling. They make a delightful snack or dessert and are perfect with a cup of tea.
The dough is soft, slightly sweet, and made from a simple mix of flour, yeast, sugar, and water. After kneading and proofing, it becomes light and pillowy, ideal for encasing the sweet filling.
The filling features smooth red bean paste, traditionally made from adzuki beans cooked and sweetened with sugar. You can use store-bought paste for convenience or make your own for a more authentic touch. Adjust the sweetness to your preference.
Serve warm for the best texture and flavor. These buns can also be stored and reheated, making them a convenient treat for later.

- Flatten each piece into a 10 cm disc, making the edges thinner and the center thicker.  
- Place a portion of red bean paste in the center of each wrapper.  
- Seal the edges completely, ensuring no gaps.  
3. Proof the Buns:
- Place the buns on parchment-lined steamer trays or plates, leaving space between each bun to prevent sticking.  
- Let them rest for 30 minutes until light and plump.  
4. Steam the Buns: 
- Boil water in a wok or pot. 
- Place the steamer trays or plate with buns over the boiling water.  
- Steam over medium-high heat for 10 minutes.  
- Serve immediately.  
5. Storage and Reheating:  
- Keep in the fridge for 3 days or freeze for up to 2 months.  
- Reheating: Steam frozen buns for 6 minutes or defrost first and steam for 3 minutes.

Cong Zhua Bing 蔥抓餅 – Traditional Chinese Scallion Pancakes


Cong Zhua Bing, or Chinese scallion pancakes, are crispy, flaky, and irresistibly savory. Made from a simple dough of flour, water, and salt, these pancakes are layered with a lightly seasoned mixture of oil, flour, and fresh scallions, then rolled, shaped, and pan-fried to golden perfection.

The beauty of scallion pancakes lies in their contrast of textures: a crunchy exterior with tender, layered interiors that create delicate pockets of fluffiness. They’re perfect as a breakfast treat, snack, or side dish, and pair wonderfully with a dipping sauce of chili oil, black rice vinegar, and soy sauce.
A classic street-food favorite turned home-cooked delight, scallion pancakes are simple to make, endlessly satisfying, and packed with umami flavor.

Tips & Tricks:
- Knead the dough well for smooth, elastic pancakes.
- Press and fold while frying to encourage layered air pockets.
- Make ahead by refrigerating or freezing; cook straight from frozen for convenience.


Ingredients (makes 6):

Dough:

- 375 g bread flour
- 240 ml hot water
- ¾ tsp. salt

Filling:

- 35 ml oil (about 2½ tablespoons)
- 45 g flour
- 1/2 tsp. salt, 1/2 tsp. white pepper
- 90 g finely chopped scallions

For Frying:

- 1 tablespoon neutral cooking oil

Instructions

1. Make the Dough:
- In a heatproof bowl, add the flour.  
- Pour in the hot water, stir until no loose flour remains.  
- Use your hands to form the mixture into a rough dough.  
- Cover tightly with cling film and let it rest for 30-40 minutes.  
2. Prepare the Filling:
- In a small bowl, mix the oil, flour and salt until smooth.  
- Set aside for use when shaping the pancakes.  
3. Shape the Pancakes:
- Knead the rested dough until smooth. Lightly coat it and the work surface with oil.  
- Roll the dough into a thin rectangle, approximately 43cm x 33cm (17” x 13”).  
- Brush the filling mixture evenly over the dough. Sprinkle the chopped scallions on top.  
- From the shorter side, roll the dough tightly into a rope.  
- Cut the rope into 6 equal pieces.  
- Take one piece, stand it on one end, press down gently, and flatten with a rolling pin into a pancake about 14cm (5”) in diameter. Alternatively, for thinner pancakes, cut into 4 pieces and roll each to about 23cm (9”).  
4. Fry the Pancakes:
- Heat oil in a frying pan over high heat until hot.
- Reduce the heat to medium. Place the pancakes in the pan (top side facing down).  
- Cover and fry for 2 minutes or until golden brown on the bottom.  
- Flip the pancakes, cover again, and fry until the other side is golden.
- Lightly press the edges with a spatula while frying to help form air pockets and fluff up layers.
- Let the pancakes rest on a wire rack for a minute to maintain crispiness.  

Serving:
- Enjoy warm as a breakfast, snack, or alongside savory dishes, soup, or congee.  
- Serve with a dipping sauce made of chili oil, black rice vinegar, and soy sauce.  

Tips:
Make Ahead:
Refrigerate: Store leftovers in airtight bags in the fridge for up to 3 days. Reheat in a pan, oven, or air fryer.  
Freeze: Freeze uncooked pancakes with parchment paper between layers. Cook directly from frozen, adding a bit of water if they are thick.

Buchujeon - Korean Chive Pancake


Buchujeon (부추전) is a popular Korean savory pancake made primarily with garlic chives (buchu). It's a type of jeon (Korean pancake), known for its crispy edges and soft, flavorful center. Buchujeon is often enjoyed as an appetizer, side dish, or snack and pairs exceptionally well with a dipping sauce made of soy sauce, vinegar, and a bit of chili.
Buchujeon is a versatile dish that's often enjoyed during the rainy season in Korea, as the sound of frying pancakes is said to mimic the sound of raindrops. It's also popular during family gatherings, parties, and Korean holidays like Chuseok (Korean Thanksgiving). Additionally, it's a beloved dish to pair with makgeolli (Korean rice wine) for a traditional, comforting meal.
Whether served as an appetizer, a side dish, or a light meal, Buchujeon is loved for its simplicity, savory flavor, and satisfying crunch.

You can also add an egg to the batter. I checked a few recipes, and they were all vegan, so they skipped the egg. However, it was mentioned that adding an egg is optional as it makes the batter richer in taste. It's super easy to make, and you can also add other ingredients like grated carrots, zucchini, or even seafood for extra flavor.


Ingredients

- 90g All-purpose flour
- 15g Cornstarch
- 15g Rice flour
- 2g Salt 
- 100g Garlic chives
- 5g Soy sauce 
- 240g icy cold water 
- 1 egg (optional)
- 20g Gochujang (optional for spicy version)

Instructions:

1. Prepare the Vegetables:
- Cut the garlic chives into 3-4cm pieces.
2. Make the Batter:
- In a large mixing bowl, combine the flours with salt, egg and cold water.
- Add soy sauce and gochujang.
- Mix lightly until just combined. The batter should be thin.
- Gently fold in the garlic chives.
3. Cook the Pancakes:
- Heat 1 tablespoon of oil in a non-stick pan over medium heat.
- Ladle some of the batter into the pan and spread it out evenly into a thin, round pancake.
- Cook for 2-3 minutes until the edges turn light golden brown. If it browns too quickly, reduce the heat to medium-low.
- Flip the pancake, add a bit more oil around the edges if needed, and press it down gently with a spatula.
- Cook the other side for another 2 minutes until golden brown.
- Repeat the process with the remaining batter.
4. Serve:
- Serve the Buchujeon hot with the dipping sauce on the side.

Banana Chocolate Pancakes - Racuchy Czekoladowo-bananowe


Racuchy are traditional Polish pancakes similar to American pancakes but may have different variations in terms of ingredients and toppings.
The batter for racuchy typically includes flour, eggs, milk or water, and sometimes yeast or baking powder for leavening. It can also contain additional ingredients such as sugar, salt, vanilla extract, and sometimes grated apples or other fruits.
Once the batter is prepared, it's cooked on a skillet or griddle until golden brown on both sides. Racuchy can be served sweet or savory, and they are often enjoyed with toppings such as powdered sugar, maple syrup, jam, fruit compote, or sour cream.

This is a non-traditional version of racuchy (Polish pancakes) made with the addition of banana and cocoa powder, offering a rich and fruity twist. Unlike the classic version with cubed apples, these pancakes are chocolaty and sweet, with a soft, moist texture from the banana.

Ingredients

- 220 cake flour
- 30g cocoa powder 
- 4g dry yeast
- 180ml warm milk
- 40g sugar
- 2 bananas
- 1 egg 

Instructions

1. Activate the Yeast:
   - If using fresh yeast, crumble it into a small bowl. If using dry yeast, you can add it directly to the flour.
   - In a mixing bowl, combine the warm milk with the sugar and yeast. Stir until the yeast is dissolved. Let it sit for a few minutes until it becomes frothy.
2. Prepare the Dough:
   - Once the yeast mixture is frothy, add the flour and egg to the bowl. 
   - Mix everything together until a smooth batter forms. You can use a whisk or a spoon for this step.
3. Proof the Dough:
   - Cover the bowl with a clean kitchen towel or plastic wrap and place it in a warm place. 
   - Allow the dough to rise for about 60 minutes, or until it doubles in size.
4. Cook the Pancakes:
   - Heat a frying pan or skillet over medium heat. 
   - Lightly grease the pan with butter or oil.
   - Using spoon scoop 1-2 spoonful of pancake batter onto the hot pan, spreading it out slightly with the back of the spoon.
   - Cook the pancake for 2-3 minutes on one side, or until bubbles form on the surface and the edges start to set.
   - Flip the pancake and cook for an additional 1-2 minutes on the other side, or until golden brown and cooked through.
   - Repeat with the remaining batter, adding more butter or oil to the pan as needed.
5. Serve:
   - Serve the pancakes warm, either plain or with your favorite toppings such as maple syrup, honey, powdered sugar, or a dollop of whipped cream.

   - In a mixing bowl, combine the warm milk with the sugar and yeast. Stir until the yeast is dissolved. Let it sit for a few minutes until it becomes frothy.

   - Once the yeast mixture is frothy, add the flour and egg to the bowl. 
   - Mix everything together until a smooth batter forms. You can use a whisk or a spoon for this step.

Naleśniki – Classic Polish Crepes


Polish naleśniki are one of those simple dishes that instantly feel like home. Soft, thin, and incredibly versatile, they’re the kind of meal you can enjoy any time of the day—sweet for dessert or savory for a satisfying lunch.

They’re similar to French crêpes, but in Poland, they’re more of an everyday staple—quick to make, endlessly customizable, and loved by both kids and adults.

One of the best things about naleśniki is how easily they can be adapted depending on what you’re craving.
For a sweet version, they’re often filled with fresh seasonal fruit like strawberries or blueberries, sweetened farmer’s cheese (twaróg), jam, honey, or chocolate spread. If you prefer something more filling, savory naleśniki are just as popular.

Once cooked, naleśniki are usually filled and then rolled up or folded into triangles. Some people enjoy them straight away, while others like to lightly fry them in butter after filling, giving them a slightly crispy, golden exterior.
Sweet naleśniki are often finished with a dusting of powdered sugar or a drizzle of cream. Savory versions can be baked in the oven with cheese or sauce for a more hearty dish.

In Poland, naleśniki are more than just food—they’re comfort, tradition, and a little bit of childhood nostalgia on a plate. Whether made quickly on a busy weekday or served as a special treat, they’re a dish that always brings people together.


Ingredients

- 320 g all-purpose flour
- 3 eggs
- 380 g milk
- 270 g water
- 15 ml oil
- 20 g sugar
- Pinch of salt 

Instructions

1. Prepare the Batter:
   - In a mixing bowl, combine the flour, salt and sugar.
   - Add the eggs, oil, milk, and water to the bowl.
   - Whisk the ingredients continuously until the mixture is smooth and free of any lumps. Alternatively, you can use a blender for a smoother consistency.
   - Set aside for at least 30 minutes.
2. Cook the Crepes:
   - Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the skillet with oil or butter to prevent sticking.
   - Once the skillet is hot, pour a small ladleful of batter onto it. Quickly swirl the skillet to spread the batter thinly and evenly across the bottom.
   - Allow the crepe to cook for approximately 1-2 minutes on one side, or until it becomes lightly golden brown.
   - Carefully flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side until golden brown.
   - Continue cooking the remaining batter in the same manner, stacking the cooked crepes on a plate as you go.
3. Serve the Crepes:
   - Serve the crepes warm with your choice of toppings. Popular options include fresh fruit, jam, Nutella, whipped cream, or syrup.

Racuchy are the quintessential Polish comfort breakfast—somewhere between a fluffy pancake and a golden fritter. Traditionally made with a yeast dough, this version uses a quick batter that delivers that same iconic "crispy-on-the-outside, airy-on-the-inside" texture without the wait. Infused with vanilla and a hint of sweetness, they are perfect for a lazy Sunday morning.

Ingredients

- 250g all-purpose flour
- 5g baking powder
- 180ml milk
- 40g sugar
- 1 egg
- 80-100g strawberries, diced

Instructions

1. Prepare the Batter:
   - In a large mixing bowl, sift together the flour and baking powder to ensure there areno lumps.
   - Add the sugar to the flour mixture and stir to combine.
   - Add the milk and eggs, and mix until well combined.
2. Prepare Strawberries:
   - Wash the strawberries, remove the leaves, and dice them.
   - Gently fold the diced strawberries into the pancake batter until evenly distributed.
3. Cook the Pancakes:
   - Heat a non-stick frying pan or griddle over medium heat, and lightly grease the pan with butter or cooking spray.
   - Once the pan is hot, add 1-2 spoonfuls of pancake batter onto the pan, and use the back of the spoon to spread it into a round shape.
   - Cook the pancake for 2-3 minutes, or until bubbles start to form on the surface and the edges begin to set.
   - Carefully flip the pancake using a spatula and cook for an additional 1-2 minutes, or until golden brown and cooked through.
   - Repeat with the remaining batter, greasing the pan as needed between batches.
4. Serve:
   - Serve the strawberry pancakes warm.
