These soft chocolate almond custard buns are the kind of bakery-style treat that feels both comforting and a little indulgent at the same time.
Each bun is shaped like a croissant: the dough is divided, rolled into triangles, filled at the wide end with almond custard, then rolled up and gently curved into a crescent shape. 
Baked until lightly golden, the buns come out soft and fluffy with a rich, creamy center that becomes even more luscious when warm. The combination of chocolate dough, almond custard, and toasted almond flakes makes them perfect for breakfast, dessert, or an afternoon coffee treat.

Ingredients:

Dough:

- 200 g bread flour
- 4 g instant yeast
- 25 g sugar
- 3 g salt
- 1 large egg
- 25 ml oil
- 60 ml milk, room temperature
- 12–15 g cocoa powder

Almond Custard Filling:

- 200 ml milk
- 25 g cornstarch
- 30 g sugar
- 1 egg
- 20 g almond powder

Additional:

- Almond flakes

Instructions

1. Prepare the Dough
- In the bowl of a stand mixer fitted with a dough hook, combine the bread flour, cocoa powder, yeast, sugar, salt, egg, oil, and milk.
- Mix on low speed until the ingredients come together.
- Increase to medium speed and knead for 8–10 minutes, until smooth and elastic.
- If the dough feels dry, add a little extra milk, 1 teaspoon at a time.
- Shape into a ball and place in a lightly oiled bowl.
- Cover and let rise until doubled, about 1½–2 hours.
2. Make the Custard
- In a saucepan, whisk together the milk, cornstarch, sugar, egg, and almond powder until smooth.
- Cook over low heat, stirring constantly, until thickened.
- Transfer to a bowl and cover with plastic wrap touching the surface.
- Cool completely before using.
3. Shape the Buns
- Divide the dough into 6 portions.
- Roll each piece into a triangle.
- Spread or pipe some filling near the wide end.
- Roll up from the wide end toward the tip, like a croissant.
- Curve slightly into a crescent shape if desired.
- Cover loosely and let rise until puffy, about 30–45 minutes.
4. Bake
- Preheat the oven to 180–190°C.
- Brush with milk or egg wash.
- Add some almond flakes on top.
- Bake for 18–25 minutes, until lightly golden.
5. Cool
- Let cool slightly before serving.
- Best eaten warm when the chocolate filling is soft.

Ingredients

Chocolate Sponge Cake

- 3–4 eggs (about 190–200 g total)
- 120 g fine sugar
- 70 g cake flour
- 40 g unsweetened cocoa powder
- 8 g baking powder

Whipped Cream Filling

- 550 ml heavy cream (36%, very cold)
- 40 g powdered sugar
- 8 g gelatin
- 40 ml cold water (for soaking gelatin)

Chocolate Ganache (Topping)

- 140 g dark chocolate (about 60%)
- 60 ml heavy cream (30%)

Additional

- 150 ml strong black tea, cooled
- 150g tart jam (black currant or plum)

Instructions

1. Make the Sponge Cake
- Preheat the oven to 170°C.
- In a large bowl, beat the eggs with sugar until the mixture becomes very light, fluffy, and thick.
- Sift in the cake flour, cocoa powder, and baking powder. 
- Gently fold everything together until smooth and fully combined.
- Pour the batter into a lined 25 × 16 cm pan.
- Bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely.
- Once cooled, slice the sponge cake horizontally into 2 layers.
2. Prepare the Cream
- Soak the gelatin in cold water and let it bloom for about 5–10 minutes.
- Heat gently until fully dissolved (do not boil).
- In a cold bowl, beat the heavy cream with powdered sugar until it reaches soft peaks.
- Mix a few tablespoons of whipped cream with the melted gelatin first to temper it.
- Gently fold the gelatin mixture back into the remaining whipped cream until smooth.
3. Assemble the Cake
- Place the first sponge layer back into the pan.
- Soak it evenly with half of the cooled black tea.
- Spread the jam evenly over the cake.
- Spread about 3/4 of the whipped cream filling over the sponge.
- Place the second sponge layer on top and gently press down.
- Soak the top layer with the remaining black tea.
- Refrigerate while preparing the ganache.
4. Make the Chocolate Ganache
- Heat the heavy cream until hot but not boiling.
- Add the chopped dark chocolate and let it sit for a minute.
- Stir until smooth and glossy.
- Pour the ganache over the top of the cake and spread evenly.
- Chill for about 30 minutes until the chocolate sets.
5. Decorate
- Use the remaining whipped cream to pipe rosettes on top of the cake.
- Chill for a few more hours before slicing.

Ingredients:

Chocolate Sponge Cake

- 3 large eggs
- 90 g brown sugar
- 60 g oil
- 80 g milk 
- 80 g cake flour
- 30 g cocoa powder
- 8 g baking powder

Cherry Filling:

- 300 g cherries (fresh or frozen, pitted)
- 50 g sugar
- 10 g corn starch
- 40 g water 
- 20 g cherry liquor

Stabilized Cream Filling:

- 350 g heavy whipping cream (very cold)
- 200 g mascarpone (cold)
- 70 g powdered sugar
- 6 g gelatin powder
-36 g cold water (for blooming)

Decoration

- Reserved cake crumbs (from trimming sponge)
- Fresh or jarred cherries

Instructions

1. Chocolate Sponge Cake
- Preheat oven to 160°C. Line a 6-inch pan.
- Beat eggs and sugar on high speed for 8–10 minutes, until pale, thick, and ribbon-like.
- Add in oil and milk.
- Sift together flour, cocoa powder and baking powder.
- Gently fold the ingredients into the batter.
- Bake 40–45 minutes, until a skewer comes out clean.
- Cool completely, then slice into 3 even layers.
2. Cherry Filling
- Cook cherries, sugar, and cherry liquor over medium heat until cherries release juice.
- Mix cornstarch with water, stir into cherries, and cook until thickened.
- Remove from heat and cool completely.
3. Stabilized Cream
- Bloom gelatin in cold water for 5–10 minutes.
- Gently melt gelatin and let it cool until lukewarm.
- Whip cream with powdered sugar to soft peaks.
- Add mascarpone and whip briefly on low speed until smooth.
- Stir the melted gelatin directly into a small portion of the cream mixture.
- Add this gelatin-cream mixture back into the main bowl.
- Whip gently until firm but smooth peaks form.
- Chill for 15-20 minutes.
4. Assemble
- Place first cake layer on a plate. Brush with cherry syrup / tea or other liquid of choice.
- Spread a thin layer of cream.
- Pipe a cream ring around the edge and fill the center with cherry filling.
- Repeat with the second layer.
- Add the third layer and soak lightly.
- Cover the top and sides with cream.
5. Decoration
- Crumble leftover cake and press crumbs onto the sides and top.
- Pipe rosettes around the edge of the cake.
- Decorate with cherries.
6. Chill
- Refrigerate at least 6 hours, preferably overnight.
- Best texture on day 2.

Ingredients:

Chocolate Cake

- 150 g sweet potato puree (room temperature)
- 2 large eggs 
- 180 g milk
- 120 g brown sugar
- 110 g neutral oil
- 190 g all-purpose flour
- 55 g unsweetened cocoa powder
- 8 g baking powder

Chocolate Crumble

- 30 g cold butter
- 25 g sugar
- 35 g all-purpose flour
- 15 g cocoa powder

Instructions: 

1. Make Crumble
- Mix flour, cocoa, sugar, salt.
- Rub in cold butter until crumbly with some larger chunks.
- Chill 10–15 minutes.
2. Make Cake Batter
- Preheat oven to 180°C.
- Line baking pan. I used 12cm x 20cm loaf pan.
- Whisk eggs and sugar 1–2 minutes until slightly lighter.
- Add oil and mix the batter.
- Add milk, sweet potato puree, mix until smooth.
- Sift in flour, cocoa and baking powder.
- Mix just until combined. Batter should be thick and creamy, not runny.
- Pour onto baking pan.
- Sprinkle crumble on top.
3. Bake
- Bake at 180°C for 40-45 minutes.
- Cool before eating.

Chocolate Sponge Cake with Strawberry Mousse & Ganache

- 50 ml heavy cream

Instructions:

1. Prepare the Chocolate Sponge
- Line a 6-inch (15 cm) square pan with baking paper.
- Preheat oven to 180°C.
- Separate egg whites from yolks.
- Beat egg whites until foamy, then gradually add sugar and whip to stiff peaks.
- Add yolks one at a time while mixing.
- Sift flour, potato starch, baking powder, and cocoa together.
- Gently fold dry ingredients into the egg mixture.
- Pour batter into the pan and smooth the top.
- Bake for 25–30 minutes.
- Cool completely.
2. Soak the Cake (Optional)
- Mix raspberry vodka (or syrup) with water.
- Brush evenly over the cooled cake.
3. Prepare the Strawberry Mousse
- Place gelatin in a small bowl and pour over 40 ml cold water. Let bloom for 5–10 minutes.
- Heat strawberries with sugar until soft.
- Blend into a smooth puree.
- Gently heat the bloomed gelatin until fully dissolved (do not boil).
- Stir melted gelatin into the warm strawberry puree. Mix well.
- Let the mixture cool to room temperature (not hot).
- Whip cold heavy cream to soft-medium peaks.
- Gently fold strawberry mixture into the whipped cream.
- Spread mousse evenly over the soaked cake.
- Refrigerate at least 4 hours (preferably overnight).

Traditionally, pieguski are simple, rustic cookies that highlight the combination of textures and flavors rather than elaborate decoration. Easy to make and perfect for sharing, pieguski are a beloved classic in Polish home baking.


Ingredients (Yield: about 20-30 cookies)

- 200g cake flour
- 120g unsalted butter
- 70g sugar
- 1 egg
- 2g baking powder

- 50g walnuts
- 50g raisins
- 80g chocolate chips / chunks

Instructions

1. Preheat the oven to 180°C (top & bottom heat). Line two baking trays with parchment paper.
2. Roughly chop the hazelnuts and raisins. Chop the milk chocolate into small chunks. Set aside
3. In a large bowl, beat the butter with the sugar until smooth and creamy. This should take about 2 minutes.
4. Add the egg and mix just until combined.
5. Sift the flour and baking powder into the butter mixture and mix again until a smooth dough forms. Do not overmix.
6. Gently fold in the walnuts, raisins, and the chocolate chunks.
7. Scoop portions of dough about the size of a walnut and place them on the baking trays, leaving space between each cookie.
8. Lightly flatten each one and press a few reserved chocolate pieces on top.
9. Bake for about 15 minutes, until lightly golden around the edges.
10. Remove the cookies from the oven. After a few minutes, transfer them to a wire rack to cool completely.

Notes
- These cookies are crisp and crumbly, similar to shortbread.
- They store well in an airtight container for several days.

Ingredients (12 × 20 cm pan)

- 80 g butter
- 50 g milk
- 120 g cake flour

- 1 tsp vanilla extract (optional)

Cheesecake:

- 250 g cream cheese (or twaróg, very smooth)
- 1 egg 
- 40 g sugar
- 1 tsp vanilla sugar (optional)

Instructions

1. Make the Chocolate Base
- In a saucepan, melt the butter, sugar, milk, and cocoa together.
- Heat gently until smooth and glossy.
- Set aside to cool until warm (not hot).
- This step is key — it’s what makes murzynek taste like murzynek.
2. Cheesecake Mixture
- Mix cream cheese with sugar until smooth.
- Add the egg and vanilla; mix just until combined.
- Set aside.
3. Finish the Batter
- Preheat oven to 170°C (top & bottom heat).
- Line a 12 × 20 cm pan with parchment.
- Add eggs to the cooled chocolate mixture, one at a time, mixing well.
- Sift in flour and baking powder; mix until just combined.
4. Assemble
- Pour chocolate batter into the pan.
- Spoon cheesecake mixture on top (make spots).
5. Bake
- Bake 40–45 minutes, until a skewer comes out with moist crumbs (not dry).
- Cool completely — murzynek tastes best the next day.

Instructions

1. Prepare the Custard
- Whisk the egg, sugar, cornstarch, and milk until smooth and lump-free.
- Transfer to a saucepan and cook over medium heat, stirring constantly.
- Cook until thick and bubbling.
- Transfer to a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
- Chill completely.
2. Make the Cake Batter
- Preheat the oven to 175°C (top and bottom heat).
- Line a 6-inch square pan with parchment paper.
- In a bowl, whisk the eggs and sugar by hand until glossy and the sugar begins to dissolve (about 30–60 seconds).
- Add the oil and mix until emulsified.
- Sift together the flour and baking powder, then gently fold into the batter until just combined.
3. Chocolate Batter
- Transfer ⅓ of the batter to a separate bowl.
- Mix in the cocoa powder and milk until smooth.
(Add 1–2 teaspoons of extra milk if the batter feels too thick.)
4. Assemble & Bake
- Spread the plain batter evenly in the prepared pan.
- Spoon the chocolate batter on top.
- Gently press the cherries into the batter.
- Bake for 40–50 minutes, until a skewer inserted into the center comes out clean.

5. Custard Buttercream
- Beat the softened butter until very light and fluffy.
- Add the cooled custard one spoonful at a time, beating well after each addition.

Tips:
- Line the baking tin well with parchment for easy removal.

Ingredients:

- 120g glutinous rice flour
- 30 g cocoa powder 
- 80 g brown sugar
- 200 g milk
- 50 g oil
- 2 eggs
- 4g baking powder

Preparation:

1. In a mixing bowl, combine glutinous rice powder, oil, eggs, dark brown sugar, and warm milk.
2. Thoroughly mix until all ingredients are well incorporated.
3. Line a rectangular or square baking tin with parchment paper.
4. Pour the prepared mixture into the lined baking tin.
5. Place the baking tin in the preheated oven [180°C (356°F)] and bake the sticky rice cake for approximately 45 minutes or until it is fully set.
6. Once the cake is done baking, remove it from the oven and allow it to cool.
7. Freshly baked cake is nicely gooey. I don't recommend keeping it for more than 3 days, as the cake will harden more once refrigerated.

- Soak gelatin in cold water (if using sheets) or bloom gelatin powder in 3–4 tablespoons of water.
- In a heatproof bowl, combine whipping cream, cocoa powder, chocolate, and gelatin.
- Place the bowl over a pot of simmering water (double boiler) and stir gently until everything is melted and smooth.
- Allow mixture to cool slightly to room temperature before using.
3. Assemble the Cake

Ingredients:

- 3 ripe bananas (about 300g)
- 3 eggs
- 120g brown sugar
- 225g all-purpose flour
- 120g neutral oil (vegetable or canola)
- 12g baking powder (about 3 tsp)
- 25g cocoa powder (about 1.5 tbsp)

Instructions:

- In a blender or bowl, combine the bananas, eggs, sugar, and oil. 
- Blend or mix until smooth.
- Sift in the flour and baking powder. 
- Stir gently until just combined—do not overmix.
- Split the batter evenly into two bowls.
- Sift the cocoa powder into one bowl and mix well to create the chocolate portion.
- Grease or line baking pan - I used a 12cm x 20cm glass baking pan.
- Using a spoon, alternate scoops of plain and chocolate batter, layering one on top of the other for a marbled effect.
- Bake in a preheated oven at 170°C (340°F) for about 50 minutes, or until a skewer inserted into the center comes out clean.
- Allow the cake to cool completely before slicing.
- Store in the refrigerator for up to 2–3 days.

Chocolate Pudding Baozi (Steamed Buns with Budyń Filling)


Soft, fluffy baozi buns wrapped around creamy Polish-style chocolate custard - an East-meets-West treat. These baozi are made with a tender, yeasted dough and filled with a rich, silky budyń (chocolate pudding), giving each bite a gooey, melt-in-your-mouth center. The contrast between the light, steamed bun exterior and the velvety chocolate inside makes these perfect as a sweet snack, dessert, or special breakfast.
Freezer-friendly - make a batch and enjoy warm, gooey buns any time.
Serve warm with a drizzle of condensed milk, melted chocolate, or a sprinkle of cocoa powder.


Ingredients

For the Filling:

- 250ml milk
- 40g corn starch
- 40g sugar
- 15g cocoa powder
- 1 egg

For the Dough:

- 240g cake flour
- 4g instant dry yeast  
- 10g sugar  
- 10g cooking oil 
- 120g lukewarm water

Instructions

1. Prepare the Custard:
- Mix or blend all the custard ingredients.
- Cook over low heat until thickened.
- Transfer to a bowl, cover with plastic wrap (touching the surface to prevent a skin from forming), and let it cool completely.
2. Prepare the Dough:
- Add all the dough ingredients to the mixer bowl.
- Knead on low speed for 8–10 minutes until smooth.
- Transfer the dough to a greased bowl, cover with a cloth, and let it rest for 1–1.5 hours until doubled in size.
3. Assemble the Buns:
- Divide the pudding into 9 equal portions.
- Once the dough has risen, deflate it gently.
- Roll the dough into a rope and cut it into 9 equal pieces.
- Flatten each piece into a 10 cm disc, keeping the edges thinner and the center thicker.
- Place one portion of pudding in the center of each disc.
- Bring the edges together and seal completely to enclose the filling.
4. Proof the Buns:
- Place the buns on parchment-lined steamer trays or plates, leaving space between them.
- Let them rest for 30 minutes until they become light and puffy.
5. Steam the Buns:
- Boil water in a wok or pot.
- Place the steamer trays or plate over the boiling water.
- Steam over medium-high heat for 10 minutes.
- Serve immediately.
6. Storage and Reheating:

Unlike the traditional - mys trucla is made with a fluffy cocoa-flavored dough and filled with creamy coconut pudding for a tropical, comforting twist. Twisted into a beautiful braid and baked until golden, it’s perfect for dessert, coffee breaks, or as a sweet gift from the heart. Drizzle with icing for an extra indulgent touch.


Ingredients

For the Dough:

- 220 g all-purpose flour
- 20 g cocoa powder
- 5 g instant yeast
- 60 ml warm milk
- 1 egg
- 60 g sugar
- 35 ml oil

For the Filling (Coconut Pudding):

- 250 ml milk
- 1 egg
- 20 g sugar
- 40 g shredded coconut
- 25 g cornstarch

Optional Topping:

- Icing sugar glaze (powdered sugar + a few drops of water or milk)

Instructions

1. Prepare the Coconut Pudding:
- Whisk or blend together the milk, egg, sugar, coconut, and cornstarch until smooth.
- Pour the mixture into a pot and cook over low heat, stirring constantly, until thickened and lightly bubbling.
- Transfer to a bowl, press plastic wrap directly onto the surface to prevent a skin from forming, and set aside to cool completely.
2. Make the Dough:
- In a large mixing bowl, combine the flour, cocoa powder, and yeast.
- Add the warm milk, egg, sugar, and oil. Mix until a dough forms.
- Knead for about 10 minutes until the dough is soft and elastic (you can use a stand mixer or knead by hand).
- Cover the dough with a clean cloth and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
3. Shape the Cake:
- After rising, punch down the dough to remove air.
- Roll it out into a rectangle, with the shorter side at least 12 cm (to match your baking tin).
- Spread the cooled coconut pudding evenly over the dough, leaving a small border around the edges.
- Roll the dough tightly into a log.
- Using a sharp knife, cut the roll lengthwise in half, leaving one end intact.
- Twist the two strips together, keeping the filling side up, then gently place the twist into a greased and parchment-lined loaf tin (12×7 cm), or shape it directly on a baking sheet for a flatter version.
- Let it rise again for at least 1 hour until puffy.
4. Bake:
- Preheat the oven to 180°C (350°F).
- Brush the top of the cake with milk or egg wash.
- Bake for 45–50 minutes, or until golden and cooked through.
- Let the cake cool in the tin for about 10 minutes, then transfer to a rack to cool completely.
5. Finish and Serve:
- Drizzle with icing once cooled, if desired.
- Store in an airtight container. Best enjoyed within 2 days, or gently warmed for a softer texture.

Chocolate Challah is a decadent twist on the traditional braided bread. Made with a rich, slightly sweet egg-enriched dough, this version features ribbons or layers of dark chocolate swirled throughout. The result is a beautifully braided loaf with a soft, tender crumb and bursts of melted chocolate in every bite. Perfect for special breakfasts, brunches, or holiday celebrations.


Ingredients

- 370 g bread flour
- 20 g cocoa powder   
- 7 g instant yeast
- 50 grams sugar  
- 2 large eggs
- 50ml oil   
- 120 ml water, at room temperature  

Instruction

1. Prepare the Dough:
   - In the bowl of a stand mixer fitted with a dough hook, mix together all of the ingredients until combined.  
   - Increase to medium speed and mix until the dough comes together. Knead for roughly 10 minutes until smooth and elastic.  
   - Add up more flour if the dough is too sticky.  
2. First Rise: 
   - Shape the dough into a ball and place it in a lightly oiled bowl.  
   - Cover with tea towel and let rise until doubled (about 1 1/2 to 2 hours).  
3. Shaping the Dough:
   - Transfer the dough to a floured work surface.  
   - Divide the dough into 2 pieces: small 1/3 of the size, bigger one 2/3 of the size
   - Divide the large piece into 3 equal portions. Roll each into a long rope.
   - Braid the ropes and pinch the ends to seal. Place the braid on a lined baking sheet.  
   - Repeat for the smaller piece and place this braid on top of the large one.  
4. Final Rise:
   - Loosely cover and let rise until puffy (about 30 to 45 minutes).  
5. Bake:
   - Preheat the oven to 190°C (375°F), with a rack set in the lower-middle position.  
   - Brush the loaf with milk or egg wash.  
   - Bake for 30 to 40 minutes until golden brown.  
6. Cool:
   - Let the loaf cool completely before slicing.  
   - Wrap tightly with plastic wrap if you want to freeze it.

Black Sweet Potato Brownies - A Healthier, Fudgy Treat


These Black Sweet Potato Brownies are a healthier take on classic brownies, with reduced sugar and the natural richness of sweet potato puree. The sweet potato not only adds moisture but also helps create that signature fudgy look, though the texture is slightly different from traditional brownies.  

The use of black cocoa powder gives the brownies their striking deep black color, making them a surprising treat  - my husband was amazed when he saw them! Unlike regular cocoa powder, black cocoa has a milder, less chocolatey flavor, so you can choose which version you prefer based on taste.  
You can also customize the toppings by adding walnuts, chocolate chips, or leaving them plain. Either way, these brownies are a delicious and unique twist on a classic dessert!  


Ingredients (for an 6'' pan)  

- 200 g sweet potato puree (cooked and mashed until smooth)  
- 100 g brown sugar  
- 2 eggs  
- 70 g cornstarch
- 50 g black cocoa powder (or regular cocoa powder for a more chocolatey taste)  
- 80 ml oil (neutral oil like canola or sunflower)  
- 50 g chocolate chips (optional, or replace with walnuts for crunch)  

Instructions

1. Prepare the sweet potato puree  
- Steam or boil the sweet potato until soft. 
- Mash it into a smooth puree and let it cool completely.  
2. Mix the wet ingredients 
- In a bowl, whisk together the sweet potato puree, eggs, oil, and brown sugar until well combined.  
3. Incorporate dry ingredients
- Sift in the cornstarch and cocoa powder. 
- Stir gently until the batter is smooth and well mixed.  
4. Prepare the pan
- Preheat the oven to 175°C (350°F).
- Line an 6 inch pan with parchment paper or grease it lightly.  
5. Assemble and bake  
- Pour the batter into the prepared pan and spread it evenly.  
- Sprinkle chocolate chips or walnuts on top (or leave plain).  
- Bake for 22-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.  
6. Cool & Serve
- Let the brownies cool in the pan for 15 minutes, then transfer them to a wire rack.  
- Slice and enjoy!

Strawberry Brownies

Ingredients:

- 2 eggs 
- 100 g brown sugar 
- 100 g melted chocolate (dark or semi-sweet)  
- 70 g oil (neutral, like vegetable or canola)  
- 70 g cornstarch  
- 50 g cocoa powder  
- 100 g strawberries (fresh)  

Instructions 

1. Preheat & Prep: 
- Preheat your oven to 180°C (350°F).  
- Line a 6-inch (15 cm) square baking tin with parchment paper.  
2. Prepare the Strawberries: 
- Wash the strawberries, remove the stems, and slice them in half. 
- Set aside.  
3. Mix the Wet Ingredients:
- In a mixing bowl, beat eggs with brown sugar until well combined.  
- Pour in the oil and melted chocolate, stirring until smooth.  
4. Incorporate the Dry Ingredients:  
- Sift in the cornstarch and cocoa powder to avoid lumps.  
- Stir gently until well combined, but do not overmix.  
5. Assemble the Brownies: 
- Pour the brownie batter into the prepared baking tin and spread it evenly using a spatula.

Marble Pumpkin Chocolate Cake


Marble pumpkin chocolate cake is a delicious dessert that combines the earthy sweetness of pumpkin with the rich, decadent flavor of chocolate. The cake features a marbled design, where the pumpkin and chocolate batters are swirled together to create a beautiful, visually striking pattern. The pumpkin adds moisture and a subtle sweetness, while the chocolate provides a deep, indulgent taste. This cake is perfect for autumn or any time you're craving a comforting, flavorful treat.
You may not notice the pumpkin flavor at first, which is great for incorporating vegetables into food for those who don't favor them. My son wasn't happy to hear that there was pumpkin in the cake, although he likes most vegetables. But once he tried it, he absolutely loved the cake, just like some other cakes with vegetables I've made before, such as spinach cake, carrot cake, or purple sweet potato mochi.


Ingredients

- 200g pumpkin, steamed
- 120g light brown sugar
- 80g neutral-flavored oil 
- 2  eggs
- 180g cake flour
- 1 teaspoon cinnamon 
- 10g baking powder

Chocolate Layer:

- 15g cocoa powder
- 25g milk

Instructions

1. Preheat Oven:
- Preheat to 180°C (350°F) 
- Line a 6-inch loaf pan with parchment paper.
2. Prepare Batter:
- Mix the wet ingredients until smooth.
- Add the dry ingredients and stir until just combined.
- Pour half the batter into a separate bowl.
- Stir cocoa powder and milk into one portion until smooth.
4. Layer Batter in Pan:
- Dollop alternating spoonfuls of pumpkin and chocolate batters into the pan.
- Gently shake to flatten layers and repeat until both batters are used.
5. Bake:
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Tent with foil if the top browns too quickly.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
6. Optional Ganache:
- Heat cream in a small saucepan until warm, then stir in chopped chocolate until smooth.

Chocolate Oat Flour Cake


I wanted to make a healthier dessert, so I swapped out wheat flour for oats instead. I ground the oats into flour and added it to the batter. The first time, I made a big mistake by adding water to the oat flour right away—it soaked up the water immediately, and once I added the other ingredients, it became tough to mix smoothly. After baking, there were visible white spots from the oats, which didn’t affect the taste but did impact the appearance.

On my second attempt, I mixed the water in at the very end, after combining all the other ingredients, which resulted in a smooth batter with no spots in the baked cake—making it look much better. While the texture was more crumbly than with regular flour, and it might not work well for something like a birthday cake, it tasted great. No one even guessed it was made with oat flour!

If you're using oat flour in this recipe, keep the 100ml of hot water as it's necessary to help hydrate the oat flour since it absorbs more liquid compared to regular wheat flour. Oat flour lacks gluten, so the cake will have a more tender , crumbly texture. You can expect the cake to be softer and slightly denser.
If you want to replace the oat flour with cake flour, reduce the amount of liquid (hot water) to about 60-70ml since cake flour contains gluten and doesn’t absorb as much water.
The presence of gluten in cake flour helps hold the cake together, so the texture will be less crumbly and more structured than with oat flour.

- 140g oat flour
- 50g cocoa powder
- 8g baking powder
- 100ml hot water
- 100g brown sugar
- 80g vegetable oil (or any neutral oil)
- 2 large eggs
- 30g almonds (sliced ​​or chopped)

Instructions

1. Prepare the pan:
- Line a 6-inch square baking pan with parchment paper or coat with cooking spray or a little oil to prevent sticking. Set it aside.
2. Mix dry ingredients:
- In a large bowl, combine oat flour, cocoa powder, baking powder and brown sugar. Mix them together evenly with a whisk, breaking up any lumps.
3. Add wet ingredients:
- Add oil and eggs to dry ingredients. Begin stirring the mixture gently to combine. The batter will thicken at this point.
4. Add hot water:
- While stirring the batter, slowly pour in hot water. Continue stirring until the batter is smooth and free of lumps. Hot water helps dissolve the sugar and creates a more even texture.
5. Prepare to bake:
- Pour the batter into the prepared 6-inch pan and spread evenly with a spatula. Sprinkle chopped or sliced ​​almonds over the top of the batter.
6. Bake the cake:
- Preheat the oven to 180°C (350°F). Once preheated, bake the cake for 40-45 minutes. To check if it's done, insert a toothpick or skewer into the center of the cake - if it comes out clean or with just a few moist crumbs, the cake is ready.
7. Cool and serve:
- Allow cake to cool completely in pan on wire rack before slicing. Once cooled, you may choose to drizzle melted chocolate on top for an extra touch. Slice and serve.

Banana Chocolate Pancakes - Racuchy Czekoladowo-bananowe


Racuchy are traditional Polish pancakes similar to American pancakes but may have different variations in terms of ingredients and toppings.
The batter for racuchy typically includes flour, eggs, milk or water, and sometimes yeast or baking powder for leavening. It can also contain additional ingredients such as sugar, salt, vanilla extract, and sometimes grated apples or other fruits.
Once the batter is prepared, it's cooked on a skillet or griddle until golden brown on both sides. Racuchy can be served sweet or savory, and they are often enjoyed with toppings such as powdered sugar, maple syrup, jam, fruit compote, or sour cream.

This is a non-traditional version of racuchy (Polish pancakes) made with the addition of banana and cocoa powder, offering a rich and fruity twist. Unlike the classic version with cubed apples, these pancakes are chocolaty and sweet, with a soft, moist texture from the banana.

Ingredients

- 220 cake flour
- 30g cocoa powder 
- 4g dry yeast
- 180ml warm milk
- 40g sugar
- 2 bananas
- 1 egg 

Instructions

1. Activate the Yeast:
   - If using fresh yeast, crumble it into a small bowl. If using dry yeast, you can add it directly to the flour.
   - In a mixing bowl, combine the warm milk with the sugar and yeast. Stir until the yeast is dissolved. Let it sit for a few minutes until it becomes frothy.
2. Prepare the Dough:
   - Once the yeast mixture is frothy, add the flour and egg to the bowl. 
   - Mix everything together until a smooth batter forms. You can use a whisk or a spoon for this step.
3. Proof the Dough:
   - Cover the bowl with a clean kitchen towel or plastic wrap and place it in a warm place. 
   - Allow the dough to rise for about 60 minutes, or until it doubles in size.
4. Cook the Pancakes:
   - Heat a frying pan or skillet over medium heat. 
   - Lightly grease the pan with butter or oil.
   - Using spoon scoop 1-2 spoonful of pancake batter onto the hot pan, spreading it out slightly with the back of the spoon.
   - Cook the pancake for 2-3 minutes on one side, or until bubbles form on the surface and the edges start to set.
   - Flip the pancake and cook for an additional 1-2 minutes on the other side, or until golden brown and cooked through.
   - Repeat with the remaining batter, adding more butter or oil to the pan as needed.
5. Serve:
   - Serve the pancakes warm, either plain or with your favorite toppings such as maple syrup, honey, powdered sugar, or a dollop of whipped cream.
