Each bun is shaped like a croissant: the dough is divided, rolled into triangles, filled at the wide end with almond custard, then rolled up and gently curved into a crescent shape. 
Baked until lightly golden, the buns come out soft and fluffy with a rich, creamy center that becomes even more luscious when warm. The combination of chocolate dough, almond custard, and toasted almond flakes makes them perfect for breakfast, dessert, or an afternoon coffee treat.

Ingredients:

Dough:

- 200 g bread flour
- 4 g instant yeast
- 25 g sugar
- 3 g salt
- 1 large egg
- 25 ml oil
- 60 ml milk, room temperature
- 12–15 g cocoa powder

Almond Custard Filling:

- 200 ml milk
- 25 g cornstarch
- 30 g sugar
- 1 egg
- 20 g almond powder

Additional:

- Almond flakes

Instructions

1. Prepare the Dough
- In the bowl of a stand mixer fitted with a dough hook, combine the bread flour, cocoa powder, yeast, sugar, salt, egg, oil, and milk.
- Mix on low speed until the ingredients come together.
- Increase to medium speed and knead for 8–10 minutes, until smooth and elastic.
- If the dough feels dry, add a little extra milk, 1 teaspoon at a time.
- Shape into a ball and place in a lightly oiled bowl.
- Cover and let rise until doubled, about 1½–2 hours.
2. Make the Custard
- In a saucepan, whisk together the milk, cornstarch, sugar, egg, and almond powder until smooth.
- Cook over low heat, stirring constantly, until thickened.
- Transfer to a bowl and cover with plastic wrap touching the surface.
- Cool completely before using.
3. Shape the Buns
- Divide the dough into 6 portions.
- Roll each piece into a triangle.
- Spread or pipe some filling near the wide end.
- Roll up from the wide end toward the tip, like a croissant.
- Curve slightly into a crescent shape if desired.
- Cover loosely and let rise until puffy, about 30–45 minutes.
4. Bake
- Preheat the oven to 180–190°C.
- Brush with milk or egg wash.
- Add some almond flakes on top.
- Bake for 18–25 minutes, until lightly golden.
5. Cool
- Let cool slightly before serving.
- Best eaten warm when the chocolate filling is soft.

2. Shape the Mantou
- Transfer the dough to a lightly floured surface.
- Roll the dough into a thin rectangle.
- Roll it up tightly into a log shape.
- Using a serrated knife, cut the log into 7 equal pieces.
- Roll into a ball and place each piece on a small square of parchment paper.
- Cover and proof in a warm place for about 30 minutes.
Tip: Avoid over-proofing, as it can cause the mantou to wrinkle after steaming.
3. Steam the Mantou
- Bring water in a steamer to a boil.
- Place the mantou in the steamer and steam over medium heat for 15 minutes.
- Turn off the heat and let the mantou rest in the covered steamer for 5–10 minutes before opening the lid.

Texture & Storage Tips
- Pumpkin moisture levels can vary, so adjust the dough with a little extra flour or water if needed.
- Store cooled mantou in an airtight container for up to 2 days, or freeze for up to 1 month.
- Re-steam before serving for the best texture.

- 125g lukewarm water

Instructions

1. Prepare the Custard:
- Mix or blend all the custard ingredients.
- Cook over low heat until thickened. Stir constantly as it's prone to burning.
- Transfer to a bowl, cover with plastic wrap (touching the surface to prevent a skin from forming), and let it cool completely.
2. Prepare the Dough:
- Add all the dough ingredients to the mixer bowl.
- Knead on low speed for 8–10 minutes until smooth.
- Transfer the dough to a greased bowl, cover with a cloth, and let it rest for 1–1.5 hours until doubled in size.
3. Assemble the Buns:
- Divide the pudding into 9 equal portions.
- Once the dough has risen, deflate it gently.
- Roll the dough into a rope and cut it into 9 equal pieces.
- Flatten each piece into a 10 cm disc, keeping the edges thinner and the center thicker.
- Place one portion of pudding in the center of each disc.
- Bring the edges together and seal completely to enclose the filling.
4. Proof the Buns:
- Place the buns on parchment-lined steamer trays or plates, leaving space between them.
- Let them rest for 30 minutes until they become light and puffy.
5. Steam the Buns:
- Boil water in a wok or pot.
- Place the steamer trays or plate over the boiling water.
- Steam over medium-high heat for 10 minutes.
- Serve immediately.
6. Storage and Reheating:
- Store in the refrigerator for up to 3 days or freeze for up to 2 months.
- To reheat: Steam frozen buns for 6 minutes, or thaw first and steam for 3 minutes.

Ingredients

Dough

- 500 g cooked potatoes (young or medium-starch potatoes)
- 1 medium egg
- 100-120 g all-purpose flour (plus extra for dusting)
- pinch of salt

Filling

- 150–250 g strawberries
- 1/2 tablespoon powdered sugar

Topping

- 25 g butter
- 1½ tablespoons breadcrumbs
- 1/4 cup light cream or natural yogurt

Instructions

1. Prepare the potatoes
- Peel the potatoes and cook them in salted water until soft.
- Drain well, then return them to the hot pot for about 1 minute to evaporate excess moisture.
- Press the warm potatoes through a potato ricer or mash them very finely.
- Let them cool completely before adding other ingredients.
2. Make the dough
- Place the cooled potatoes in a bowl.
- Add pinch of salt, an egg and flour.
- Mix and knead briefly until a soft dough forms.
- If it is too sticky, add a bit more flour.
- The dough should be soft and slightly sticky – too much flour will make the dumplings dense.
3. Prepare the strawberries
- Wash and dry the strawberries. Remove the stems.
- Place them on a towel and lightly sprinkle with powdered sugar.
- Choose medium strawberries so the dumplings stay neat.
4. Form the dumplings
- Dust your work surface with flour.
- Divide the dough into pieces about the size of a walnut.
- Roll into balls, then flatten each into a small disk.
- Place a strawberry in the center and wrap the dough around it, sealing well.

They’re incredibly versatile: serve them sweet with jam, honey, or fruit sauce, or savory with goulash, mushroom sauce, or a hearty filling. Pampuchy are perfect for family meals, weekend breakfasts, or festive occasions, and they store and reheat beautifully, making them convenient for busy days.

With just a few basic ingredients, these buns showcase the charm of Polish home baking—simple, comforting, and utterly delicious.


Ingredients

- 5g yeast
- 280 g all-purpose flour
- 120 ml warm milk
- 1 egg
- 10 ml oil
- Salt, a pinch
- 15g sugar

Instructions

1. Make the dough
- In a large mixing bowl (or stand mixer bowl), combine all ingredients:
flour, yeast, milk, egg, oil, sugar, and salt.
- Mix until everything comes together, then knead for at least 5 minutes (or 8–10 minutes in a mixer) until the dough is smooth, elastic, and soft but not sticky.
2. Let the dough rise
- Transfer the dough to a greased bowl.
- Cover the bowl with a clean towel or plastic wrap.
- Leave it in a warm, draft-free place for about 1 hour, or until the dough doubles in size.
3. Shape the buns
- Transfer the risen dough to a lightly floured surface.
- Divide into 7 equal pieces (≈68–70 g each).
- Shape each piece into a smooth round ball by rolling it between your hands.
- Cover with a clean towel and let rest for 15 minutes to puff up slightly.
(If you can’t steam all at once, keep the remaining dough balls in the fridge to prevent over-proofing.)
4. Steam the pampuchy
- Bring water to a gentle boil in your steamer (water should reach about ⅓ up the pot).
- Place the pampuchy on the steamer insert, leaving enough space between them (they will expand).
- Cover tightly and steam for 15 minutes over medium heat — steady but not vigorous boiling.
- Do not open the lid while steaming.
- When done, remove the buns carefully. Repeat with the remaining dough if needed.
5. Serving Ideas
- Sweet: serve warm with jam, fruit sauce, sweetened sour cream, or honey & butter.
- Savoury: serve with goulash, mushroom sauce, or fill with savoury stuffing before steaming.
6. Storage
- Store in an airtight container in the fridge for up to 5 days.
- Reheat in the microwave for 40–60 seconds until soft and warm.
- Freeze for up to 2 months; defrost and re-steam or microwave until fluffy again.

Pleśniak – Polish Layered Meringue Cake with Jam


Pleśniak is a beloved Polish layered cake known for its rustic charm and delightful mix of textures. The cake combines a buttery shortcrust base, a tart jam layer, fluffy meringue, and sometimes a hint of cocoa, all topped with more grated shortcrust. Its name literally means “moldy” in Polish—a playful nod to its speckled, uneven appearance that looks homemade and inviting.

This cake became popular in Polish kitchens in the mid-20th century, a time when home baking flourished. It was a favorite for holidays, family gatherings, and cozy afternoons, celebrated not for perfection but for its comforting flavors. Over the years, bakers have adapted Pleśniak with different jams, cocoa layers, or nuts, making it both traditional and versatile.

What makes Pleśniak truly special is the contrast of textures: the crumbly shortcrust, the soft, tart jam, and the airy, sweet meringue. Each bite offers a perfect balance of flavors and a little taste of Polish nostalgia. It’s a cake that’s simple to make, endlessly customizable, and always a crowd-pleaser—proof that sometimes, the most charming desserts are the ones that look homemade.


Ingredients:

Dough:

- 230 g cake flour
- 6 g baking powder
- 25 g caster sugar
- Pinch of salt
- 125 g cold butter
- 2 egg yolks (save whites for meringue)
- 10 g dark cocoa powder

Meringue:

- 2 egg whites
- 80 g sugar

Filling:

- 150 g blackcurrant jam (or other tart jam)

Instructions:

1. Prepare the Dough
- In a large bowl, combine flour, baking powder, sugar, and salt.
- Add cold butter (cut into small cubes) and rub it into the dry ingredients using your fingertips until the mixture resembles coarse crumbs.
- Add egg yolks and quickly knead the dough just until it comes together.
- Divide the dough into three portions: two equal larger parts and one smaller.
- Mix the cocoa powder into one of the larger portions until fully incorporated.
- Wrap all three dough portions in cling film and refrigerate for 1 hour.
2. Assemble
- Line a 6-inch (15 cm) square baking tin with baking paper.
- Preheat the oven to 180°C (356°F), top–bottom heat.
- Grate the bigger one of the plain dough portions into the tin and gently press it down to form the base.
- Spread the jam evenly over the base layer.
- Grate the cocoa dough evenly over the jam layer.
- In a clean bowl, whisk egg whites until foamy. Gradually add sugar while beating until stiff, glossy peaks form.
- Spread the meringue over the cocoa layer.
- Grate the remaining plain dough over the meringue to form the top layer.
3. Bake
- Bake in the preheated oven for 40–45 minutes, until the top is golden and the meringue is set.
- Turn off the oven, crack the door open slightly, and let the cake cool inside for 10–15 minutes to prevent the meringue from collapsing.
- Remove from the oven and cool completely on a wire rack before slicing and serving.

Pączki Pieczone - Baked Donuts Recipe


These soft baked doughnuts are a lighter, oven-baked alternative to traditional fried pączki. Made with a gently enriched yeast dough, they’re tender, fluffy, and delicately sweet, with a soft crumb that stays moist thanks to butter, egg yolks, and milk.

Once baked, the buns are filled with jam or marmalade (I used rose marmalade), then finished simply with powdered sugar or a fresh citrus glaze made from mandarin or lemon juice. The glaze adds a bright, fragrant contrast that pairs beautifully with the soft dough, while candied orange peel brings a festive touch.

Perfect for Fat Thursday, holidays, or everyday baking, these baked doughnuts are easy to prepare, less heavy than fried versions, and ideal for baking with kids. Best enjoyed fresh on the day they’re made, they’re wonderful with a cup of coffee or tea—and just sweet enough to satisfy without being overwhelming.


Ingredients:

Dough:

- 250 g cake flour 
- 50 g butter 
- 40 g granulated sugar 
- 7 g instant yeast
- 100 ml milk, room temperature or slightly warmed
- 2 egg yolks 
- Pinch of salt

Other ingredients / toppings

- jam or marmalade for filling
- candied orange peel
- 4 tbsp citrus juice 
- 100g powdered sugar for glaze

Instructions:

1. Make the dough:
- In a large bowl, combine the flour, yest, milk, egg yolks, butter, and sugar. 
- Mix with a wooden spoon or silicone spatula.
- Knead the dough with a dough hook for at least 5 minutes or by hand. The dough should be smooth, slightly sticky, but elastic. 
- Cover with a cloth or plastic wrap and let rise in a warm, draft-free place for about 1 hour.
2. Shape the buns:
- Turn the risen dough onto a lightly floured surface. 
- Form a smooth ball and divide into 9 equal portions (~50 g each). 
- Shape each portion into a smooth ball. If the surface is uneven, buns may crack while baking.
- Place dough balls on a baking tray lined with parchment paper, leaving enough space between each. 
- Gently flatten the top with your hand. Cover loosely with a cloth and let rise for 20–30 minutes while preheating the oven.
3. Bake the donutes:
- Preheat oven to 180°C (356°F) with top/bottom heat. 
- Place the tray in the middle of the oven. 
- Bake for 20–25 minutes until risen and golden. 
- Remove the tray immediately after baking.
4. Fill and glaze:
- While buns are still warm, inject jam or marmalade using a wide syringe, piping bag, or disposable piping bag.
- Optional glaze: mix 4 tbsp citrus juice (mandarin or lemon) with 4 heaping tbsp powdered sugar (~110 g). Brush lightly on warm buns. Sprinkle with candied orange peel if desired.
- If only dusting with powdered sugar, do this after the buns have completely cooled.
5. Storage:
- Fully cooled buns can be wrapped in parchment and stored in a bag or container at room temperature. No need to refrigerate. 
- Best eaten the day they are baked, but they remain tasty the next day.

- Use warm but not hot milk and softened butter.
- Maintain gentle oven temperatures for rising dough.

- Preheat your oven to 180°C (350°F).
- Line a 6-inch square cake tin with parchment paper (bottom and sides if preferred). 
3. Mix the batter:
- In a large mixing bowl, whisk together the eggs, brown sugar, and oil until smooth and slightly lighter in color. This helps incorporate some air and ensures the sugar begins to dissolve.
- Sift in the flour, baking powder, and cinnamon.
- Stir until just combined. Do not overmix — the batter should be smooth but not overworked.
- Fold in the grated carrots, chopped walnuts, and raisins using a spatula.
- Mix gently until they are evenly distributed throughout the batter.
4. Bake the cake:
- Pour the batter into the prepared cake pan and spread it evenly.

Chałka (Challah) - a Classic Polish Sweet Braided Bread

Ingredients

Dough:

- 410 g bread flour  
- 7 g instant yeast
- 50 grams sugar  
- 7 g salt 
- 2 large eggs
- 45ml oil   
- 120 ml milk, at room temperature  

Crumble:

- 30g butter 
- 25g sugar
- 50g flour 

Instructions:

1. Make the Crumble
- In a small bowl, combine flour and sugar and cold butter cubes.
- Rub the mixture between your fingertips (or use a fork/pastry cutter) until it forms coarse crumbs — similar to wet sand or small pea-sized bits.
- Keep the crumble in the fridge while you prepare and shape the dough (it should stay cold until baking).
2. Prepare the Dough
- In the bowl of a stand mixer fitted with a dough hook, combine all the dough ingredients: flour, yeast, sugar, salt, eggs, oil, and milk.
- Mix on low speed until combined, then increase to medium speed and knead for about 10 minutes, until the dough is smooth and elastic.
- If the dough feels too sticky, add a little more flour (1 tablespoon at a time).
- Shape the dough into a ball and place it in a lightly oiled bowl.
- Cover with a tea towel and let rise in a warm place until doubled in size (1½ to 2 hours).
3. Shape the Braided Loaf
- Transfer the dough to a floured work surface.
- Divide the dough into 2 portions:
   Large piece: about ⅔ of the dough
   Small piece: about ⅓ of the dough
- Divide the large piece into 3 equal parts and roll each into a long rope.
- Braid the 3 ropes and pinch the ends to seal. Place this large braid on a lined baking sheet.
- Repeat with the smaller piece to form a second, smaller braid and place it on top of the large one.
- Loosely cover the loaf and let rise until puffy (30–45 minutes).
4. Bake
- Preheat the oven to 190°C (375°F), with the rack in the lower-middle position.
- Brush the top of the loaf with milk or egg wash.
- Sprinkle the prepared crumble evenly over the top of the loaf.
- Bake for 30–40 minutes, until the bread is golden brown and sounds hollow when tapped on the bottom.
5. Cool & Store
- Let the loaf cool completely before slicing.
- Once cooled, wrap tightly in plastic wrap or store in an airtight container.
- To freeze: wrap well and freeze for up to 2 months. Defrost at room temperature before serving.

Ingredients:

Dough:

- 300 g bread flour
- 5g yeast
- 1 egg
- 25 g sugar
- 125 ml milk
- 20 g oil

Filling:

- 300 ml milk
- 20g corn starch
- 40g sugar
- 2 eggs

Crumble:

- 60 g flour
- 20 g oil
- 35 g sugar

Instructions:

1. Mixing the Dough:
   - In a large mixing bowl, combine the flour, salt, and yeast. Gradually add the warm water.
   - Knead the dough using a mixer with a dough hook or by hand for about 10 minutes, until it becomes smooth and elastic.
2. First Proofing:
   - Transfer the dough to a lightly greased bowl, cover it with kitchen towel, and place it in a warm location. 
   -  Allow it to double in size, which usually takes about 1-1.5 hour.
3. Prepare fillings:
   -  Pour milk into a pot, add corn starch, sugar and egg, mix well together.  
   -  Cook, stirring constantly until thickened into custard. 
   -  Remove from the heat, cover with plastic wrap and set aside to cool.
4. Prepare the crumble:
   -  In a small bowl, combine flour, sugar and oil.
   -  Use your fingers to rub the ingredients together until a crumbly mixture forms.
5. Shape the buns:
   -  Once the dough has risen, transfer it to a floured surface and divide it into 6-8 equal pieces.
   -  Roll each piece into a ball and flatten slightly to form a round buns.
   -  Using the bottom of a glass, press down on the center of each bun to create an indentation for the filling.
6. Assemble the buns:
   -  Fill the recess with a ball of prepared pudding.
   -  Sprinkle crumbs over.
7. Bake:
   -  Preheat the oven to 180°C (350°F).
   -  Place the buns on a baking sheet lined with baking paper.
   -  Let them rest for another 20 minutes.
   -  Bake for about 20 minutes, or until the buns are golden brown.

Instructions

1. Prepare the Dough:
   - In a bowl, combine all the ingredients using a spoon or spatula.
   - Knead the dough for 10-12 minutes until smooth, making sure to remove as many air bubbles as possible.
   - Cover with a tea towel and let it rest for 1 to 1.5 hours.

- 30 ml oil
- 80 ml milk (room temperature)

Almond Pudding Filling:

- 250 ml milk
- 1 egg
- 25 g sugar
- 25 g almond flour (powder)
- 30 g cornstarch

Garnish:

- 50 g sliced almonds
- Milk (for brushing)

Instructions

1. Prepare the Almond Pudding:
- In a small pot, whisk or blend together all filling ingredients until smooth.
- Cook over low heat, stirring constantly, until the mixture thickens and just begins to bubble.
- Transfer the pudding to a bowl, press plastic wrap directly on the surface, and let it cool completely.
2. Make the Dough:
- In the bowl of a stand mixer fitted with a dough hook, combine all dough ingredients.
- Mix on low speed until combined, then knead on medium speed for about 10 minutes until smooth and elastic.
- Add a little more flour if the dough is too sticky.

- Roll each piece into a long log and seal the seam.

- Cut it down the middle - leaving the folded end intact.
- Twist the two cut halves together and shape them gently into a heart. Press lightly to flatten.
4. Final Proof:
- Place the shaped buns on a parchment-lined baking tray.
- Loosely cover and let rise until puffy, about 30 minutes.
- Brush the tops with milk and sprinkle with almond slices.
5. Bake:
- Preheat the oven to 190°C (375°F).
- Bake for 20–30 minutes, or until golden brown on top.
6. Serve:

2. Prepare the Dough:
- Add all the dough ingredients to the mixer bowl.
- Knead on low speed for 8–10 minutes until smooth.
- Transfer the dough to a greased bowl, cover with a cloth, and let it rest for 1–1.5 hours until doubled in size.
3. Assemble the Buns:
- Divide the pudding into 9 equal portions.
- Once the dough has risen, deflate it gently.
- Roll the dough into a rope and cut it into 9 equal pieces.
- Flatten each piece into a 10 cm disc, keeping the edges thinner and the center thicker.
- Place one portion of pudding in the center of each disc.

Ingredients

For the Dough:

- Knead for about 10 minutes until the dough is soft and elastic (you can use a stand mixer or knead by hand).
- Cover the dough with a clean cloth and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
3. Shape the Cake:
- After rising, punch down the dough to remove air.
- Roll it out into a rectangle, with the shorter side at least 12 cm (to match your baking tin).
- Spread the cooled coconut pudding evenly over the dough, leaving a small border around the edges.
- Roll the dough tightly into a log.

- Twist the two strips together, keeping the filling side up, then gently place the twist into a greased and parchment-lined loaf tin (12×7 cm), or shape it directly on a baking sheet for a flatter version.

Racuchy with Strawberries (Polish Yeast Pancakes)


Racuchy are soft, pillowy Polish pancakes typically made with a yeast-based dough, giving them a light and airy texture. They’re gently pan-fried until golden brown and often studded with juicy strawberries inside or served with fresh fruit on top. Slightly sweet and beautifully crisp on the outside, they make a delightful breakfast or afternoon treat - perfect dusted with powdered sugar or served with a dollop of sour cream.
My version is simplified and uses baking powder, saving you an hour of waiting time. 


Ingredients:

- 250g all-purpose flour
- 5g baking powder
- 180ml milk
- 40g sugar
- 1-2 eggs
- 200g strawberries, sliced

Instructions:

1. Prepare the Batter:
   - In a large mixing bowl, sift together the flour and baking powder to ensure there are no lumps.
   - Add the sugar to the flour mixture and stir to combine.
   - Add the milk and eggs, and mix until well combined.
2. Prepare Strawberries:
   - Wash the strawberries, remove the leaves, and dice them.
   - Gently fold the diced strawberries into the pancake batter until evenly distributed.
3. Cook the Pancakes:
   - Heat a non-stick frying pan or griddle over medium heat, and lightly grease the pan with butter or cooking spray.
   - Once the pan is hot, add 1-2 spoonfuls of pancake batter onto the pan, and use the back of the spoon to spread it into a round shape.
   - Cook the pancake for 2-3 minutes, or until bubbles start to form on the surface and the edges begin to set.
   - Carefully flip the pancake using a spatula and cook for an additional 1-2 minutes, or until golden brown and cooked through.
   - Repeat with the remaining batter, greasing the pan as needed between batches.
4. Serve:

   - Cover with tea towel and let rise until doubled (about 1 1/2 to 2 hours).  
3. Shaping the Dough:

   - Divide the dough into 2 pieces: small 1/3 of the size, bigger one 2/3 of the size
   - Divide the large piece into 3 equal portions. Roll each into a long rope.
   - Braid the ropes and pinch the ends to seal. Place the braid on a lined baking sheet.  
   - Repeat for the smaller piece and place this braid on top of the large one.  
4. Final Rise:
   - Loosely cover and let rise until puffy (about 30 to 45 minutes).  
5. Bake:

   - Brush the loaf with milk or egg wash.  
   - Bake for 30 to 40 minutes until golden brown.
