Knedle z Truskawkami – Classic Polish Strawberry Potato Dumplings


These traditional Polish dumplings, Knedle z Truskawkami, are a sweet and comforting treat made with tender potato dough and fresh strawberries. Each dumpling is soft and pillowy, encasing a juicy, lightly sugared strawberry, then finished with buttery breadcrumbs and cream or yogurt. Perfect for a dessert, snack, or cozy family meal, these dumplings are nostalgic, simple to make, and absolutely delicious.
This recipe makes about 20 dumplings, ideal for sharing or enjoying over several days.

 

Ingredients

Dough

- 500 g cooked potatoes (young or medium-starch potatoes)
- 1 medium egg
- 100-120 g all-purpose flour (plus extra for dusting)
- pinch of salt

Filling

- 150–250 g strawberries
- 1/2 tablespoon powdered sugar

Topping

- 25 g butter
- 1½ tablespoons breadcrumbs
- 1/4 cup light cream or natural yogurt

Instructions

1. Prepare the potatoes
- Peel the potatoes and cook them in salted water until soft.
- Drain well, then return them to the hot pot for about 1 minute to evaporate excess moisture.
- Press the warm potatoes through a potato ricer or mash them very finely.
- Let them cool completely before adding other ingredients.
2. Make the dough
- Place the cooled potatoes in a bowl.
- Add pinch of salt, an egg and flour.
- Mix and knead briefly until a soft dough forms.
- If it is too sticky, add a bit more flour.
- The dough should be soft and slightly sticky – too much flour will make the dumplings dense.
3. Prepare the strawberries
- Wash and dry the strawberries. Remove the stems.
- Place them on a towel and lightly sprinkle with powdered sugar.
- Choose medium strawberries so the dumplings stay neat.
4. Form the dumplings
- Dust your work surface with flour.
- Divide the dough into pieces about the size of a walnut.
- Roll into balls, then flatten each into a small disk.
- Place a strawberry in the center and wrap the dough around it, sealing well.
- Roll gently into a smooth ball.
- Repeat with the remaining dough.
5. Cook
- Bring a large pot of salted water to a boil.
- Add the dumplings gently.
- When they float to the surface, cook for 4 minutes.
- Remove with a slotted spoon.
- Cook in batches so they have space to move.
6. Prepare the topping
- Melt the butter in a pan.
- Add the breadcrumbs and cook briefly until lightly golden (not too dark).
7. Serve
- Serve the dumplings warm with:
- buttered breadcrumbs
- cream or natural yogurt.
- They can also be refrigerated and lightly pan-fried before serving.

Pumpkin Kopytka – Soft Polish Dumplings


These pumpkin kopytka are a warm, autumn-inspired twist on a traditional Polish comfort food I grew up with. Classic kopytka are made with potatoes, but adding pumpkin gives them a beautiful color, a subtle sweetness, and an even softer, more delicate texture.

They’re incredibly simple to make with just a few basic ingredients, yet the result is something truly special—soft, pillowy dumplings that melt in your mouth. You can serve them the traditional way with butter and toasted breadcrumbs, or go for a sweeter version with a sprinkle of sugar and cinnamon.

This is the kind of dish that feels like home—perfect for cozy days, family meals, or introducing a little bit of Polish cuisine with a seasonal twist.


Ingredients:

- 300 g pumpkin puree (very thick and well reduced)
- 1 egg
- 260 g all-purpose flour
- ½ teaspoon salt
- Optional: a pinch of nutmeg

Instructions:

1. Prepare the Pumpkin Puree
- Roast or steam the pumpkin until very soft.
- Blend until smooth, then cook off excess moisture if needed.
- The puree must be very thick, not watery.
2. Make the Dough
- In a bowl, combine the pumpkin puree, egg, salt, and nutmeg (if using).
- Mix well, then gradually add the flour.
3. Knead
- Knead gently until you get a soft, slightly elastic dough.
- Do not add too much flour — less flour means lighter, more tender kopytka.
4. Shape the Kopytka
- Divide the dough into portions.
- Roll each portion into a log, lightly flatten it, and cut into diamond-shaped pieces.
5. Cook
- Bring a large pot of salted water to a boil.
- Add the kopytka in batches.
- Cook for 1½–2 minutes after they float to the surface.
- Remove with a slotted spoon.
6. Serving Suggestions
- Classic: butter and toasted breadcrumbs
- Savory: sage butter and Parmesan cheese
- Main dish: with mushroom or cream sauce
- Sweet version: butter, sugar, and cinnamon (if the pumpkin is sweet)

Tips
- Watery pumpkin puree = sticky dough. It’s better to reduce the puree than to add extra flour.
- You may add 1–2 tablespoons potato starch if the dough is hard to handle.
- Kopytka freeze very well (freeze uncooked on a tray).

Pierogi z Serem – Polish Cottage Cheese Dumplings


Pierogi z serem are the ultimate Polish comfort food—pillowy dumplings filled with a creamy, sweet farmer’s cheese that feels like a warm hug in a bowl. While the cheese version is a timeless classic, the beauty of these sweet pierogi is their versatility. As the seasons change, the same tender dough can be filled with bursting blueberries or juicy summer strawberries, turning a simple meal into a vibrant celebration of fruit. Whether topped with a dollop of cold sour cream or a dusting of sugar, they are the heart of Polish home cooking.


Ingredients (20 Dumplings)

For the Wrappers:

- 150g high-gluten flour
- 90 ml hot water
- Pinch of salt

For the Filling:

- 250g cottage cheese
- 1 egg yolk
- 1 tablespoon (about 30 g) powdered sugar

Instructions

1. Prepare the Dough:
   - In a mixing bowl, combine the all-purpose flour with a dash of salt.
   - Gradually add the hot water while mixing until a dough forms.
   - Knead the dough until it becomes smooth and elastic. Let it rest for about 15 minutes.
2. Prepare the Filling:
   - In a separate bowl, mash the cottage cheese with the egg yolk and powdered sugar until well combined.
   - Use a blender for a smoother texture if desired.
3. Assembly:
   - After the dough has rested, roll it out on a floured surface until it is about 2-3mm thick.
   - Use a round cutter to cut out circles from the dough.
   - Place a small spoonful of the cottage cheese filling in the center of each dough circle.
   - Fold the dough over the filling to form a half-moon shape, then press the edges firmly to seal.
4. Cooking:
   - Bring a large pot of slightly salted water to a boil.
   - Carefully drop the dumplings into the boiling water.
   - Stir gently to prevent sticking to the bottom.
   - Cook for 3-4 minutes from when they float to the surface.
   - Remove the dumplings with a slotted spoon and drain excess water.
5. Serve the cottage cheese dumplings hot, optionally with a sprinkle of powdered sugar or a dollop of sour cream.
