Spring Rolls With Vegetable Pork Filling


These baked spring rolls are a healthier take on the classic fried version, featuring a crisp, golden exterior and a flavorful filling wrapped in thin flour-based wrappers. Perfect as an appetizer, snack, or light meal, they’re easy to make and packed with fresh ingredients.
Thin flour-based wrappers, typically used for spring rolls, provide a light and delicate shell. They crisp up beautifully in the oven without the need for deep frying.
The filling can be customized with your favorite ingredients.
Serve hot with a dipping sauce, such as sweet chili, soy-vinegar, or hoisin-peanut sauce.


Ingredients:

Meat Filling:

- 15gn cornstarch
- 15ml soy sauce
- ¼ teaspoon white pepper powder
- 250g minced pork

Vegetables:

- 20g dried shiitake mushrooms, rehydrated and sliced
- 100g thinly sliced cabbage
- 100g julienned carrot
- 40g chopped spring onion
- 1 tbsp ginger, grated
- 2 tablespoons oyster sauce

Other:

- 15-20 spring roll wrappers
- Sweet chili sauce for dipping

Instructions

1. Prepare the Beef:
- In a bowl, mix the minced beef with cornstarch, sugar, soy sauce, and white pepper.
- Chill the mixture in the fridge for 30 minutes to allow the flavors to blend.
- Heat oil in a pan, add the beef mixture, and stir-fry until fully cooked. 
- Break the meat into small pieces, then set aside.
2. Prepare the Vegetables:
- In the same pan, heat some oil and fry the ginger until fragrant.
- Add the cabbage, carrot, shiitake mushrooms, and spring onion. Cook until slightly soft but not mushy.
- Return the beef to the pan, add oyster sauce, and mix everything well.
- Let the filling cool. If it’s too wet, strain it through a colander to remove excess liquid.
3. Assemble the Spring Rolls:
- Place a spring roll wrapper on a clean surface. 
- Add 1-2 tbsp of filling on the edge.
- Fold the edge to cover, then fold left and right corners towards the center. 
- Roll tightly.
4. Bake:
- Preheat the oven to 220°C (430°F).
- Place spring rolls on a parchment-lined tray.
- Bake for 30 minutes, flipping halfway, until golden and crispy.

Spinach Cake

Today, spinach cake recipes can be found in various cuisines and cultures, adapted to fit local tastes and ingredients. Whether it's a Western-style cake, an Asian-inspired dessert, or a fusion creation, spinach cake offers a unique way to incorporate vegetables into baking and enjoy a nutritious and flavorful treat.

This spinach cake is moist, flavorful, and a great way to sneak some extra greens into your diet. Feel free to adjust the sweetness level to your preference by adding more or less sugar. 

Ingredients

- 150g fresh spinach leaves
- 90ml oil
- 1.5 tablespoons lemon juice (optional)
- 2 eggs
- 100g sugar
- 170g flour
- 2 teaspoons baking powder

Instructions

1. Prepare the Spinach Puree:
   - Wash the spinach leaves thoroughly and dry them using a kitchen towel.
   - Transfer the dried spinach leaves to a blender container.
   - Add the oil and lemon juice (if using) to the blender.
   - Blend the mixture until smooth. Set aside.
2. Prepare the Batter:
   - In a large mixing bowl, beat the eggs with sugar until fluffy and pale in color.
   - Gradually add the blended spinach mixture to the beaten eggs and sugar. Mix until well combined.
   - Sift the flour and baking powder into the batter.
   - Gently fold the dry ingredients into the spinach batter until just combined. Be careful not to overmix.
3. Bake the Cake:
   - Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
   - Line a 6-inch baking tin with parchment paper.
   - Pour the cake batter into the prepared baking tin, spreading it evenly.
   - Place the baking tin in the preheated oven.
   - Bake the cake for 30-40 minutes or until a toothpick inserted into the center comes out clean.
4. Cool and Serve:
   - Once baked, remove the cake from the oven and allow it to cool in the tin for a few minutes.

Instructions

   - Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out any excess moisture. This step is important to ensure crispy pancakes.
2. Mix the Batter:

3. Fry the Pancakes:

Ingredients

- 100g garland chrysanthemum
- 1 egg
- 60g all-purpose flour
- 50g milk
- Salt, to taste
- Pepper, to taste
- Oil, for frying

Instructions

1. Prepare the Garland Chrysanthemum:
   - Wash the garland chrysanthemum thoroughly under cold water to remove any dirt or impurities. 
   - Pat them dry with paper towels
   - Finely chop them
2. Make the Pancake Batter:
   - In a mixing bowl, crack the egg and beat it lightly.
   - Gradually add the flour and milk to the egg mixture, stirring continuously until you have a smooth batter.
   - Season the batter with salt and pepper according to your taste preferences. 
   - Mix well to ensure the seasoning is evenly distributed.
   - Add the chopped garland chrysanthemum to the batter and mix well.

Naleśniki are versatile Polish crepe-like pancakes that can be enjoyed with various fillings. These spinach versions not only add a vibrant color but also a nutritional boost. They can be served with sweet or savory fillings, making them perfect for any meal of the day!

Ingredients

- 210 g cake flour
- 2 eggs
- 250 ml milk
- 120 ml water
- 60 g spinach leaves (fresh or frozen)
- 20 g sugar (adjust to taste)
- Salt to taste

Instructions

1. Prepare the Spinach:
   - If using fresh spinach, wash it thoroughly under running water and remove any tough stems.
   - If using frozen spinach, thaw it completely and squeeze out any excess water to avoid watery batter.
2. Make the Batter:
   - In a blender or food processor, combine the spinach, eggs, milk, water, sugar, and a pinch of salt. Blend until the mixture is smooth and well combined.
   - Gradually add the cake flour while blending until a smooth batter forms. If the batter is too thick, adjust the consistency by adding a little more water until it reaches a pourable consistency.
3. Rest the Batter:
   - Let the batter rest for about 30 minutes. This allows the gluten to relax, resulting in more tender crepes and helps the flavors to meld.
4. Cook the Crepes:
   - Heat a non-stick skillet or crepe pan over medium heat. Lightly grease it with a small amount of oil or butter.
