Taiwanese Tomato Egg Drop Soup


Tomato Egg Drop Soup is a comforting classic in Chinese home cooking — simple, nourishing, and full of flavor. This soup is beloved for its ease: just a handful of everyday ingredients come together in minutes, making it perfect for busy weeknights or a quick, wholesome lunch. It’s often enjoyed with steamed rice or as part of a larger meal, but it stands beautifully on its own as a bowl of warmth and comfort.


Ingredients

- 500g tomatoes, chopped
- 3 eggs
- 1 tsp white pepper
- 30g green onions, chopped
- 1.2 liters chicken or vegetable stock
- 20g cornstarch
- 50 ml cold water
- Salt, to taste

Instructions

- In a bowl, beat eggs with white pepper and a pinch of salt.
- Heat a little oil in a pot.
- Add tomatoes and sauté on medium-high heat for 2–3 minutes until softened.
- Add the white parts of green onion.
- Cook for another 1–2 minutes.
- Pour in the stock.
- Bring to a simmer for 1–2 minutes.
- Mix cornstarch with water, pour into soup and stir.
- Simmer until slightly thickened.
- Turn heat to low and slowly drizzle in beaten eggs while gently stirring.
- Let eggs set for 30 seconds, then lightly stir.
- Season with salt and extra white pepper if needed.
- Add green onion tops.

Bowtie Seaweed Tomato Soup


Bowtie seaweed tomato soup is a flavorful and nutritious dish combining the umami richness of seaweed with the tangy freshness of tomatoes. The broth is light yet savory, can be enhanced with seasonings like garlic, onion, and soy sauce. This soup is both comforting and refreshing, making it an ideal option for a light meal or starter.


Ingredients:

- 2 large tomatoes  
- 250g seaweed  
- 1 small carrot  
- 120g fresh mushrooms  
- 3 slices of ginger  

Instructions:

1. Prep the Ingredients:
   - Peel and chop the carrot into chunks.  
   - Remove the stems from the mushrooms.  
   - Remove the stems and dice the tomatoes.  
   - Wash the seaweed thoroughly.  
2. Cook the Soup: 
   - Add all the prepared ingredients into a cooking pot.  
   - Pour in enough water to submerge everything.  
   - Season with salt, pepper, or other seasonings to taste.  
   - Add the ginger slices and bring the soup to a boil over high heat.  
   - Once boiling, lower the heat and simmer for 30 minutes.  
3. Serve:
   - Adjust the seasonings to taste.  
   - (Optional) Stir in a beaten egg at the end of cooking for an egg drop soup style.  
   - Serve hot and enjoy!

Daikon Radish and Tomato Soup with Beef Meatballs


A hearty and comforting soup combining the mild sweetness of daikon radish, the tanginess of tomatoes, and juicy beef meatballs. This dish is light yet satisfying, perfect for chilly evenings or a wholesome meal.  

Serve with a side of crusty bread or steamed rice for a complete meal. A drizzle of olive oil or a sprinkle of cheese can enhance the flavors further. 

Ingredients:

For the Meatballs:

- 250g ground beef
- Salt and pepper, to taste
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch

For the Soup:

- 300g daikon radish
- 10g fresh ginger
- 1-2 tablespoons oil
- 3-4 tomatoes, cut into wedges
- A bunch of fresh basil leaves
- Salt and pepper, to taste
- Water (enough to cover ingredients)

Instructions:

1. Prepare the Meatballs:
   - In a bowl, combine ground beef, salt, pepper, oyster sauce, and cornstarch.
   - Mix well and form small round meatballs. Set aside.
2. Prepare the Vegetables:
   - Peel and cut the daikon radish into bite-sized pieces.
   - Cut the tomatoes into wedges.
   - Slice the ginger thinly.
3. Cook the Soup:
   - Heat a pot over medium heat and add 1-2 tablespoons of oil.
   - Add the daikon radish pieces and fry until golden brown.
   - Add the sliced ginger and sauté briefly until aromatic.
   - Add the tomato wedges and cook until softened.
   - Pour in enough water to cover the ingredients, then season with salt and pepper.
   - Bring the soup to a boil, then reduce the heat and simmer for about 30 minutes, or until the radish is tender.
4. Add the Meatballs:
   - Carefully add the meatballs to the simmering soup.
   - Cook for an additional 10 minutes, or until the meatballs are fully cooked.
5. Finish and Serve:
   - Add the fresh basil leaves and cook for just a few seconds until wilted.
   - Adjust seasoning if needed.
   - Serve hot.

 Tips:
- For extra flavor, you can add a dash of fish sauce or soy sauce to the soup.
- The soup can be garnished with chopped scallions or cilantro for added freshness.

Chinese Tomato Egg Stir-Fry


Chinese Tomato Egg Stir-Fry, known as "番茄炒蛋" (Fānqié chǎo dàn) in Mandarin, is a classic comfort food dish that's popular across China and Taiwan. This simple yet flavorful dish combines the sweetness of ripe tomatoes with the richness of scrambled eggs, resulting in a satisfying meal that's perfect for lunch or dinner. 

Ingredients

- 1-2 scallions
- 3-4 tomatoes
- 3-4 eggs
- Salt, white pepper, sugar (to taste)
- 1/2 tsp sesame oil
- 2 tbsp ketchup (optional)
- 1 tbsp Shaoxin wine (optional)
- 1 tsp soy sauce
- 60ml water
- 3 tbsp vegetable oil for frying

Instructions

1. Prepare the ingredients. 
   - Wash the tomatoes thoroughly and cut them into wedges. 
   - Crack the eggs into a bowl and beat them, seasoning with a pinch of salt and pepper, sesame oil and Shaoxin wine if you are using. 
   - Thinly slice the spring onions, separating the white and green parts.
2. Frying:
   - Heat up cooking oil in a large skillet or wok over medium-high heat.
   - Once the oil is hot, add the beaten eggs to the pan.
   - Allow them to scramble. Set aside for later use.
   - Add the white parts of the spring onions to the pan and fry briefly to release their flavor.
   - Add the tomato wedges to the pan and stir-fry them for 2-3 minutes until they begin to soften. Add some water if they aren't very juicy.
   - Once the tomatoes are cooked to your desired texture, return the scrambled eggs to the pan and mix them together with the tomatoes.
   - Add ketchup and other seasonings to taste.
   - Stir in the sliced green parts of the spring onions, incorporating them evenly into the mixture.
3. Seasoning:
   - Drizzle soy sauce over the tomato and egg mixture, stirring well to combine and ensure the flavors are evenly distributed.
   - Adjust the seasoning as needed, adding more salt, pepper, or soy sauce to suit your preferences.
4. Transfer the tomato egg stir-fry to a serving dish
   - Garnishing with additional sliced spring onions if desired.
   - Serve the dish hot as a flavorful side dish or spoon it over steamed rice for a satisfying main course.
