Carrot Gingerbread Cake

Ingredients (for a 12×22 cm pan)

- 3 eggs
- 120 g brown sugar
- 30 g honey
- 100 g oil (neutral oil like canola or sunflower)  
- 320 g all-purpose flour
- 15 g cocoa powder  
- 10 g baking powder
- 1.5 tbsp (20 g) gingerbread spice mix  
- 200 g grated carrot (finely grated for better texture)  
- 50 g walnuts (chopped)  

Instructions

1. Prepare the wet ingredients:
- In a large mixing bowl, whisk together the eggs, brown sugar, honey, and oil until well combined.
2. Mix the dry ingredients: 
- Sift the flour, cocoa powder, and baking powder into the bowl. 
- Add the gingerbread spice mix and stir gently until all ingredients are incorporated.
3. Combine the ingredients:
- Gradually fold the dry mixture into the wet ingredients, stirring gently until a smooth batter forms. 
- Avoid overmixing to keep the cake light.  
4. Add the carrot and walnuts:  
- Gently fold in the grated carrot and chopped walnuts, ensuring they are evenly distributed throughout the batter.  
5. Prepare the baking pan:
- Line a 12×22 cm baking pan with parchment paper or grease it for easy removal. 
- Pour the batter into the pan and spread the top evenly.  
6. Bake the cake:
- Preheat the oven to 180°C (350°F). 
- Bake for about 1 hour, or until a toothpick inserted into the center comes out clean.  
7. Cool and serve:
- Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. 
- Once cooled, dust with powdered sugar or cover with melted chocolate for extra indulgence.

Creamy Pumpkin Soup

Ingredients

- 600 g pumpkin, peeled and cubed
- 200 g sweet potato, peeled and cubed
- 120 g carrot, peeled and sliced
- 1 onion, chopped
- 2–3 cloves garlic, minced
- 25 g butter
- 400 ml water
- 100 ml milk (or cream, to taste)
- 1-2 bay leaves
- 2–3 allspice berries
- Turmeric, to taste
- Salt, to taste
- Black pepper, to taste

Instructions

1. In a large pot, melt the butter over medium heat.
2. Add the onion and sauté until soft and translucent.
3. Add the garlic and cook for 30 seconds, just until fragrant.
4. Add the pumpkin, sweet potato, and carrot.
5. Pour in the water, then add the bay leaf, allspice, turmeric, salt, and pepper.
6. Bring to a boil, then lower the heat and simmer until the vegetables are very soft.
7. Remove the bay leaf and allspice.
8. Blend the soup until completely smooth.
9. Stir in the milk or cream, adjust seasoning if needed, and gently reheat.
10. Serve hot, plain or with croutons, pumpkin seeds, or a swirl of cream.

Carrot Cake

 

Carrot cake is a delicious and moist dessert that combines the natural sweetness of grated carrots with a flavorful blend of spices such as cinnamon or nutmeg. Often adorned with cream cheese frosting, carrot cake strikes a perfect balance between the earthy notes of carrots and the rich, creamy topping, creating a delightful treat enjoyed by many for its unique flavor and texture.
This carrot cake recipe results in a moist and flavorful dessert, and the optional frosting or powdered sugar adds a delightful finishing touch. 

Ingredients

- 150g carrots, grated
- 2 large eggs (approximately 120g)
- 100g brown sugar
- 80ml oil
- 140g all-purpose flour
- 8g baking powder
- 0.5 tsp cinnamon
- 30g chopped walnuts
- 20g raisins

Instructions

1. Peel and grate carrot, set aside for later.
2. Preheat your oven to 180°C (350°F), line 6-inch cake tin with parchment paper.
3. In a mixing bowl, whisk together the eggs, brown sugar, and oil until well combined.
4. Sift dry ingredients to the wet ingredients, mixing well together. This forms the basic cake batter.
5. Gently fold in the grated carrots, chopped walnuts, and raisins until they are evenly distributed throughout the batter. This adds texture and flavor to the cake.
6. Pour the batter into the prepared cake pan, spreading it out evenly.
7. Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean. The baking time may vary, so keep an eye on the cake and perform the toothpick test to ensure it's fully baked.
8. Allow the carrot cake to cool in the pan before transferring it to a wire rack to cool completely.

Polish Carrot Gravy


Polish Carrot Gravy (Sos Marchewkowy) is a flavorful sauce made from cooked carrots, often served alongside various meat dishes, potatoes, or as a topping for dumplings. This sauce is both simple to prepare and delicious, offering a slightly sweet and earthy flavor that complements many traditional Polish meals.

Ingredients

- 400g carrots
- Water (enough to cover the carrots)
- Salt and pepper to taste
- 15g flour
- 40ml oil

Instructions

1. Peel the carrots and cut them into small pieces / dice them.
2. Place the chopped carrots in a pot and add enough water to cover them.
3. Season with salt and pepper according to your taste.
4. Bring the water to a boil, then reduce the heat to simmer. Cook the carrots until they are soft and tender.
5. In a separate skillet or saucepan, heat the oil over medium heat.
6. Add the flour to the hot oil and stir continuously to prevent lumps from forming. Continue cooking and stirring until the flour turns golden brown and develops a nutty aroma. This process is known as making a roux.
7. Add cold water and stir well until no lumps.
8. Once the roux is ready, carefully add it to the pot with the cooked carrots. Stir well to combine the roux with the carrots.
9. Allow the mixture to come to a gentle boil and cook for an additional 3-4 minutes, stirring occasionally.
10. Serve the Polish carrot gravy hot as a delicious and flavorful side dish.
